Award Winning Soft Chocolate Chip Cookies

Tried this recipe due to the high ratings and must agree that it's awesome--anyone who didn't think so did something wrong!! I followed the recipe almost exactly--added about a tsp of salt as I bake with unsalted butter, omitted the nuts, and only used one lge pkg of choc. chips. Instead of making cookies however, I spread the batter in an 11x17 sheet pan and baked for 22 mins. (Any smaller of a pan and you'd have to use 2--full recipe does make a lot of batter). These were the best cookie bars I've EVER made (and I bake a lot!!) The flavor & texture the next day was even better than the first--had to give them away to friends and family right away for fear I was going to totally gorge myself!!

Raspberry and Apricot Rugelach

Wow,what a great treat. Even family members that weren't apricot fans loved these. A bit of effort to make but well worth it. Used seet cream butter (unsalted)which gave them an extra buttery taste. This receipe is definetely a keeper!

Awesome Carrot Cake with Cream Cheese Frosting

Moist, yes, healthy & nutritous? Not exactly!! Excellent cake and very moist. Followed advice of other reviewers and used only 1/2 the oil, added applesauce, more cinnamon, some allspice, & nutmeg, and drained the pineapple slightly and didn't put in the pecans (used for decoration instead). Baked in two 8" round pans and came out great. Frosting seems fine to me. Will definetly make this again (p.s. tastes even better if sits in the fridge for a day--if you can get it to stick around that long!!)

Toffee Chunk Cheesecake

Second time I've made this & won Grand Prize at Local contest. Found that these modifications make it a winner. First layer is too mcuh so use just half the amount of caramel & choc mixture then fold chopped toffee bits into cheesecake mxtr b4 pouring into crust (that way it actually has toffee chunks!). Bake at 425 for 20 mins then 250 for 1 hr+ (total for me was 1hr 10 mins). Use water bath and check center w/inst read therm for 160-165 degrees and will be perfect!!!
