About this Cook
I am a Year 1 and 2 teacher and I find that teaching requires a lot of energy. I like to unwind by cooking. When I'm cooking I'm in my happy place. I have 2 daughters who still live at home, one is at University, the other about to start her last year of high school. My son lives in another city but when he comes home for Christmas I love to serve him up good food. My husband enjoys eating a variety of foods and I sure do enjoy cooking for everyone.
My favorite things to cook
I love to bake desserts, cakes, biscuits and muffins but probably the thing I like to make the most is gelato. My family get so much enjoyment from testing the latest gelato creation that I have made. I also like to cook for other people and enjoy entertaining at home.
My favorite family cooking traditions
My mum always makes me a plum pudding for Christmas. I never eat store bought puddings just my mums pudding and receiving her pudding in the mail and then eating it is a treasured tradition. I enjoy it when my whole family is together in the kitchen preparing the meal I have planned. We always make a special ice-cream pudding (my family doesn't eat traditional fruit puddings) with layers of ice-cream with chocolates crushed up in the ice cream layers. This year it will be a gelato creation featuring my homemade gelato in an ice-cream pudding

I made this with a food processor. I added lemon zest from one lemon and about 1 cup of cranberries. These were so good! A quick and easy scone recipe that is a winner.

Blender Hollandaise Sauce
Made this for breakfast on Christmas morning to have with Eggs Benedict. I was so impressed by how easy this was to make, how it didn't curdle or even look like it would and how devine it tasted. This is a recipe that I will use over and over again to make this tricky sauce. Tricky no longer though!

Honey Mustard Dressing II
When I tasted this dressing after making it, it tasted too tangy. I had made a double batch and only used 1 and a half tablespoons of dijon mustard. We served it with a coleslaw type salad (capsicum, carrot, spinach, shallots, red cabbage and wombok cabbage shredded finely). Well, it was an amazing dressing for the salad. Perfectly easy to prepare and the taste was perfect when eaten with the salad. I used home made mayo (Whole Egg Mayonnaise recipe from All Recipes) as we are trying to be careful about chemicals and preservatives in processed foods these days.
