Classic Pancakes

Good basic pancake recipe. Usually we would use soy milk but I had left over heavy cream, just over a cup, so I used all that. I also added 2 tbls of flax powder and a handful of mini chocolate chips. Very fluffy - but probably due to the cream!

Blueberry Sauce

Used pint of blueberries. Didn't measure - just what I had from store purchase. Used 1/2 cup instead of 3/4 cup sugar. Fruit... already a "dessert". Tasted great on the Company Cheesecake. On toast later. Now, I am using it for pancakes... Yum.

Company Cheesecake

Loved it. I don't have a spring form pan so used a pie pan. Used double the nuts. Tasted great! So had more crust than should and could have doubled the crust for 2 pans and had 2 cheese cakes with amount of batter. Had "Blueberry Sauce" from all recipes... With drizzle of chocolate sauce... Fabulous! First cheesecake ever and this will be the recipe I use.

Banana Crumb Muffins

Classic Cinnamon Rolls

I realized early into making these that I only had 7 cups of flour, so I literally poured in half the already mixed potato butter sugar water mixture and proceeded to halve the remainder of the recipe (1 egg and 4 1/4 cup flour). That was really plenty! 12 decent sized rolls! I'd only do the full recipe if serving more than 6-8 people. I have learned with first time using whole wheat flour in several recipes that it is heavier. I think, from this point on, I'll mix regular and whole wheat flour. I also didn't get the rise I wanted (some but not awesome) in the time frame I needed (it is below zero outside and our house is at 67, even with the oven on, there isn't much "warm" air to help). They were still fluffy, but not as fluffy if I had used standard flour and helped (& waited) with warmer air for rise. I mixed in raisins. I added 1 tps of almond extract to the cinnamon sugar middle and cut some of the butter. Mixed it together before spreading all together. For the halved frosting, I used 2 tbs cream cheese, 1 tbs butter and vanilla flavored silk for the milk. The frosting was perfect for me in amount and flavor.

Chocolate Chip Banana Muffins

Solid. Easy. Plenty. For me, two bananas. The batter was on the thick side but it seemed to bake just fine. I didn't have milk chocolate chips so I used white I had on hand. For the second half of the batter, I tossed in dried cranberries (which I had been soaking in water/juice to plump up some). I preferred the latter, my husband preferred the regular. I only have small tins so for me I baked 2 mini tins for about 13 minutes. I would definitely try a loaf. These went fast. One reason I don't bake often. Ha!

Honey Garlic Vinaigrette

Quick. Easy. For Christmas dinner the salad got many reviews. It was light but flavorful. Not too sweet and not too tart like some vinaigrettes can be. Nicely balanced. I added it to mixed greens (including spinach), carrots, mushrooms, red and yellow peppers, cucumbers, finely shredded cheddar jack cheese and croutons.

Get a Husband Brunswick Stew

We've never had anything like it. We enjoyed it, but I don't know if it will get on the "when will you make it again list" but rather the I'll make it again from time to time and we all thought it was good but not great. It was a little on the sweet side so I think I would add spice.

Sausage and Egg Casserole

I have made this twice. Good base to start from. I have made it plain and have added vegetables too. I prefer to use a spicy sausage because otherwise I find it too bland.. I don't typically like egg bake and soggy bread and somehow this one does it for me.

White Chocolate Chip Oatmeal Cookies

These were/are wonderful! I am not much of a cook, but decent (or daring) enough to spin a recipe the first time. I know I like the sweet and salty tasted so I added another couple pinches of salt. Also, I have never cooked with flax seed - but hear people adding that to tons of recipes, so I cut the oats by 1/2 cup and added 1/2 cup flax seed. Before reading other reviews, I knew I wanted to add dried cranberries, I am glad to see that I am not the only pleased with the result (added 1/2 cup). I would maybe add 3/4 cup instead the next time. Also, we have unsalted nut mix on hand in the house, so I took a handful and crushed them with the meat tenderizer - that was about a 3/4 cup. For the chocolate, I did half white chips and half 60% dark chips. I absolutely love these cookies! I've eaten 4 before I've been able to store them for my fiance. I WILL make these again. The are the prettiest and tastiest cookies I have ever made. They were not flat at all! I am very very pleased. Thanks for the help!
