Pineapple Pecan Cheese Ball

Oh no, I forgot to mention in the recipe that you need to drain the crushed pineapples. Don't put the juice in the recipe, otherwise the balls will never firm up in the fridge.

White Almond Wedding Cake

Fantastic cake. Very moist. A bit more dense than straight box cake mix, but not quite dense enough for carving cakes. I've used it for carving, but only cause I hadn't found a better option yet at that time. The cake's great for stacked wedding cakes though, and cupcakes too. It's a very good white cake base that you can alter with extracts and flavors to your own taste (I like using vanilla, almond and butter flavoring, a little less than 1tsp each). You can even use different flavors of cake mix, like lemon or spice, pretty much every flavor but chocolate (I suggest using a completely different recipe for chocolate cakes). Bake times will vary depending on the size of your pan, so just keep an eye on when it starts to set up and test with a cake tester or tooth pick.

Wedding Cake

Great cake! Nice dense, moist, rich yellow cake. The butter and egg flavors really come through, much like a pound cake, in both flavor and density, though not quite as fine of a texture as pound cake. Great for carving! Too dense for cupcakes. Tastes better the second day. The cake has a slightly crusty surface after baking, but it will absorb a bit of moisture from icing and go away after decorating it. Because of the richness of the cake, I suggest an icing that's not too sweet.

Nutty Chicken Fingers

Saw this recipe in a cook book years ago and fell in love with it! The chicken comes out very moist (if you don't over cook it) and soooo deliciously tasty. It's a fantastic alternative to fried chicken (much healthier without the frying). They're very adult tasting, while still being such a kid-pleaser!

Caesar Salad Dressing

So glad to finally find a restaurant-quality caesar salad dressing that's just how I like it! Too many store-bought caesar dressings are similar to italian dressing. This one's super creamy, spicy (in that garlicky way) and packed full of flavor! Don't let the anchovy fillets scare you off either! You can buy anchovy paste and it's just as good an easier to incorporate too! Plus the anchovy paste comes in a tube and will keep for the next time you make the dressing.

Caesar Salad Supreme

Cream of Cauliflower Soup II

Surprisingly great flavor, yet very mild at the same time. An immersion blender (boat motor) is a must! Between that and the soft texture of the potatoes and cauliflower, the soup has a great velvety texture!

Sausage Gravy III

My dad made this same recipe when I was a little girl. It's so simple and soooo good! When we were feeling particularly like treating ourselves, we'd use bacon drippings instead of margarine. And you can flavor the gravy to your liking simply by the type of sausage you buy (plain, spicy, maple, etc).

Holiday Chicken Salad

Someone brought this to a party yesterday and it was fabulous! Each of the flavors are subtle in their own way but combine to make for an amazingly delicious chicken salad! I was completely blown away by how good this was since I normally am not one for fruit of any sort in my chicken salad. The woman who made it strongly recommended letting the salad sit for 1-2 days after you make it for the flavors to mix. She served it on crackers as an appetizer, but it'd be great on sandwiches too, or in any use.

Roasted Vegetables

Amazingly good and yet so simple! I doubled the recipe to feed a family gathering. Also spent $3 on some big foil roasting pans that worked great for cooking it and threw away for easy clean up! Also used pearl onions so they were bigger than slices of onion. And we cut up fresh green beans for color, which actually turned out fantastic (and I normally hate green beans!). The dish looks fantastic with yellow and orange potatoes (yukon and sweet), red peppers, green beans and white pearl onions. So pretty!! Not to mention that the herbs and vinegar combo tastes great too! It's a win/win recipe!

Sausage Crescent Rolls

Soooooo delicious! I used Jimmy Dean sage flavored sausage and added a few shakes of my pizza seasonings into it (which is basically garlic, dried onion, italian herbs and crushed red pepper - all good sausage flavorings) since I'd read someone else's review saying that the cream cheese helps cut any spiciness of the sausage, and they were right. Don't be afraid to have very flavorful sausage since the cheese tones it down somewhat (no where near bland, just down a tad). Also I found that you can buy a tube of crescent dough without the crescents cut out. They sell the exact same thing just as one big rectangle, so no more pinching the seams together for purposes like this. The tube packaging even markets it for appetizers and such like this. This is a wonderful flavor and a new favorite in my house!

Graham Streusel Coffee Cake

Fantastic recipe! Easy and sooooo delicious. I bought cinnamon graham crackers (instead of plain graham crackers), and a good thing too since I found I was out of cinnamon, but it ended up perfect in the end. The cake is so moist and delicious, and there's plenty of streusel (and I like a LOT of streusel, so that's saying something). The office thinks I'm a god for bringing this dish in to work. Cook it in an $2.50 disposable foil pan and it's perfect for bringing to work or pot-lucks. I cooked it the night before, then put it in a 200-degree oven the next morning for 30 minutes to warm it up again. It was great and moist still. It's rare I find a recipe that I don't want to tweak in some small way, but this is great as is!
