Easy Batter Fruit Cobbler

I added a touch of vanilla and a cup extra of fruit and it was spectacular! Will make again for sure! SO EASY!

Seasoned Swai Fish Fillet

I used the allrecipes phone app when in the grocery store and saw Swai fish and had no idea how to cook it. I made this recipe for dinner tonight as the ingredients are commonly stocked in my home. Everyone loved this! I served it with steamed green beans and some quinoa. To make extra sauce to put on rice or quinoa, double it. I used butter instead of margarine. This recipe is saved to my recipe box now and I'll make it again!

Coconut-Curry Lentil Stew Served over Quinoa

Very yummy recipe! Used 2 cans light coconut milk due to yellow lentils. Used canola oil (didn't have coconut oi) Used split yellow lentils (instead of the red because all I had were split red lentils and they would have turned to paste) and a can of fire roasted tomatoes since I didn't have fresh in the house. Added a dash of cayenne pepper to heat it up a little. Very satisfying, very delicious restaurant quality lentil dish! An inexpensive way to eat ethnic! You can get the powdered coconut at any of the Indian/Pakistani type grocery/specialty stores and its well worth it! Keep these items in your pantry for when you are shut in, or not in the mood to cook a big production meal. I call these my "pantry meals" for when I have not had time to run to the store, at least I always can make a delicious dinner with things I have on hand! DO MAKE THIS RECIPE!

Split Pea and Ham Soup I

It does need some carrots, garlic, celery and broth. I had some ham broth I'd frozen and I picked up a Honey Baked Ham bone. Threw in a bay leaf, and two slices of chopped bacon, and this made a really fantastic soup! I don't believe it would have had the really rich flavor without the things that I added.

Beef Barley Stew

This is SO SO SO good! Loved it! It is absolutely delicious and hearty. Added 3 cloves of chopped garlic, dredged the meat in flour like a few suggested, added extra barley and broth, and I chopped two potatoes into it. It's a wonderful recipe and will become a regular in my cooking rotation! YUM!!!! Definitely "company worthy"!!

Gigantes (Greek Lima Beans)

This is an easy but remarkably delicious recipe! You'd be surprised how amazing lima beans can taste! This is a real keeper! Do cut down on the amount of oil, you don't really need that much and use some vegetable or chicken broth instead.

Ultimate Shrimp Scampi

Artichoke Tuna Toss

This recipe is simply awful. The sauce stayed thin, it was bland, greasy and overall horrible. We had to make more salad and threw this stuff out.

Pumpkin Whoopie Pies

I made these for Thanksgiving in order to have something different that was still very much in the feel of Thanksgiving food. These are very yummy and a pleasant surprise to people when they see and eat them for the first time. Suggestion is not to make them too big, (which is tempting!) as they are very rich. People were a little shy trying them the first time so I was cutting them in half. Next time I'll make them a little more along the lines of two bite sized. Perfect for fall, perfect for bake sales, everyone loved these whoopie pies!

Janet's Rich Banana Bread

Made this without the nuts and doubled it to use up the bananas I had. VERY dense, high rising, moist and delicious recipe! The family loved it! Freezes well. My new go-to recipe for banana bread!

I served this at a Thanksgiving buffet. I had the Southern Comfort on the side so everyone of every age could have some punch. It was very well liked by everyone, and is especially good with the Southern Comfort. A very nice, refreshing punch!
