Granola Bars III

This was very easy to make and very tasty! I made some modifications to the recipe. I didn't have any wheat germ so i didn't use it. Instead of vegetable oil, I used coconut oil to reduce fat. Since I'm allergic to walnuts, I added crushed natural almonds, unsalted pumpkin seeds and raisins. I'm sure whatever nuts or seeds you use it will turn out delicious. Next time I will use less sugar. Thanks for sharing!

Barley Bake

Delicious! I was planning to make barley soup and found this. I love it. Made some alternations: Used half the butter, omitted the green onions, instead, I satay chopped leeks and diced red pepper for colour. After baking, I broiled the top for a couple minutes and it turned out great! Thank you for sharing a wonderful recipe. This one is a keeper will be a house staple.

Artichoke Spinach Lasagna

This was delicious! It's time consuming but what lasagna isn't?:) And it was totally worth it. I did make some substitutions. I omitted the broth, didn't think it was necessary. Instead of frozen spinach I used fresh baby spinach by chopping it into smaller pieces. After I added the tomato sauce, also added a bay leaf and let it simmer for a bit. Instead of shredded mozzarella I used goat's cheese (I'm trying to avoid cow's milk). Because goat's cheese is stronger, I didn't use that much, just put little pieces on top of each layer. Didn't bother with the feta since I was already using goat's cheese. Delish! Even my 3 yr old asked for seconds! She's never asked for seconds for anything! Thanks for sharing! This is definitely a keeper!

Tomato Cucumber Salad

Quick, easy and simple. I used red onion instead (tastes better) and drizzled EVOO (extra virgin olive oil). Squeezed 1/2 lemon juice and added salt & pepper for taste. Goes great with baked pork chops. Thanks for sharing!

Shepherd's Pie V

I did a lot of modification because I didn't have all the ingredients. I used ground chicken instead, only 1 chicken boullion cube and added butter and milk to the mashed potatoes. I also added shredded mozzerella & cheddar cheese on top. That was a great touch! It still turned out really good except, I agree with a few others, it needs some sort of gravy. Next time, I will prepare a gravy to go with it.

Roasted Pork Loin

I cooked a 2.5 lbs roast for 1 hour, 10 min. It was juicy, but I was confused what I was suppose to cook the roast in so I just put it in a baking dish, uncovered. I thought it was too much rosemary, will definitely try it again with less or with another spice.

Spinach Lentil Soup

Very yummy! I soaked the lentils in water for a few hours. It cut the cooking time in half! Used all broth as suggested by others. Also used basmati rice and baby spinach. This is definitely a keeper!

Roasted Beets 'n' Sweets

Very yummy. I baked the beets at 425 degrees for 15 min. and when I added the sweet potatoes, I baked it for 30 min. It saved me lots of time. Just keep an eye out as some ovens vary. Don't think the sugar was necessary. Thanks for sharing!

Mom's Brown Gravy

This was my first time making homemade gravy and it was delicious! I didn't even have all the ingredients and it was still tasty. Substituted yeast extract for miso (I got it from a miso soup package), used garlic powder instead of onion powder and added 1 beef bouillion. Next time I will omit the salt. I don't think I even needed the miso! Thank you for sharing, this was perfect with our mashed potatoes!

Fabulous Beef Tenderloin

This was my first time making a roast and it was very easy to make. We like to dip slices in the gravy and found it to be too salty. It was very tasty but salty. I even used unsalted butter and light soy sauce. Maybe next time I'll try using half the ingredients. My roast was 2.5Ibs and I had to cook it for 60 minutes to have it medium. Overall, it was very easy, simple and tasty and my husband liked it so I know I'll be making it again. Thanks for sharing.

Salmon Fillets with Creamy Dill

Easy, quick and very yummy! You definitely don't need that much mayo. I had tons left. You don't need to spread a lot of mayo on the salmon. If you want more, put it on the side. I used all dried herbs, eye-balled the amount of mustard and it turned out great. Next time, I will squeeze fresh lemon on the salmon before I top it will mayo. I just love lemon with salmon. Thanks for sharing, this is definitely a keeper.

Creamy Broccoli Soup

This was very quick & easy. I used a hand blender to puree the broccoli and onions in the broth to make it thicker. Didn't think the flour was necessary. I was looking for a recipe that required basic ingredients and didn't call for heavy cream. Thanks for sharing.

Bean Soup With Kale

This was very easy to make and so tasty. My husband doesn't like kale and he loved it. The tomatoes were a very nice touch. I added carrots and celery just for more veggies and simmered the soup a little longer than called for so the kale would be more tender. This is definitely a keeper and will be regular in my family. Yummy Bok Choy Salad

Quick and very easy. It's a great change from the usual lettuce and/or spinach I make. I took a chance and used cider vinegar since I didn't have any white, and luckily the dressing tasted great still. Well definitely use white vinegar next time. Thanks for sharing.

Easy Fusilli with Tomato Pesto Sauce

Very good. Easy to add any spice. From my spice rack, I added dried oregano, cayenne pepper, salt, pepper and pepper flakes for a nice kick. I also added onions and fresh chilantro because I didn't have basil and used 3 cloves of garlic instead of two. I only had speghetti noodles, worked just fine! Sprinkled freshly grated parmesan cheese on top, delicious! I like it because it's nice and light, however, my husband would've liked it better if it was thicker. Because of that, I'd rate 4.5 but I'll give it a 5 because I'm the cook! Thanks for the simple recipe.

Addictive Sweet Potato Burritos

Very easy to make, but I was expecting more in the taste. Toasting the tortilla in the oven makes a difference - good touch. Maybe next time I'll add corn, guacomole and a little sour cream.

Sweet Potato Biscuits

It's okay. I ended up spreading a lot of butter on top for more taste. I had to bake it for at least 35 min. Maybe the dough was too soft or they were placed on the baking sheet too thick? I might try this again. I gave it 3 stars because it requires basic ingredients and my picky husband had seconds. I might try this again.

Bulgur Stuffing

Delicious! Very easy, fast and very tasty, Definitely a keeper! This is a great replacement for rice. I don't think it tastes exactly like stuffing though... but I still love it anyway. Thank you!

Beef and Noodle Bake

Very easy to make and has a lot of flavour too. Made many adjustments (partly because I misread the directions). I began boiling the macaroni before I started the rest of the preparation. Added broccoli, red bell pepper, onions and mushrooms for a more hearty dish. Added oregano, basil and pepper to the ground beef for flavour as others suggested. Shredded mozzerella and cheddar and mixed all the ingredients together rather than layering it before I baked it for 30 min. Still turned out great. I gave 4 stars because there's nothing different or special about it. But, my husband and I still enjoyed it very much. Thank you for a tasty meal!
