Blueberry Cream Muffins

I absolutely love this muffin recipe!!! I originally reviewed this recipe a few years ago (making it exactly like recipe states) & it's amazing! However, today I found blackberries on sale & decided to make blackberry muffins. Besides blackberries instead of blueberries, I added about an extra 1/2 cup of sugar & sprinkled sugar on top - those were the only changes. And again, amazing!!! I'm going to try it with strawberries next!

I made this for Easter & my family loved it! I used the Cream Cheese Frosting II & that just made it perfect. Like Scotchgirl, I also boiled the raisins in orange juice, as well as added nutmeg. I didn't add coconut (didn't have any). It was awesome!

Spaghetti Sauce II

I made this for tonight's dinner. I made a couple of changes - I only had 6 oz of tomato paste & no wine, but I added a can of diced tomatoes. We prefer meatballs to italian sausage, so we had those instead. I let it simmer on low for a few hours & it was amazing!

Custard Bread Pudding

Oh... My... Gosh! This was SO good. I had a package of Sara Lee dinner rolls that I needed to do something with (I ended up using 9 of the rolls). The only change I made with the bread pudding itself was I used only 2/3 C. Sugar. For the sauce, I used brown sugar (for more "caramely" taste) & I used milk instead of water. It is so wonderful when warm!!

Colleen's Slow Cooker Jambalaya

I made this for work for Fat Tuesday. I doubled the recipe, in hopes that there would be some to take home for dinner. There wasn't. Everyone raved about it! I will be making this again, this time for the family!

Chicken 'n' Stuffing

I added sage, thyme & basil and it gave it wonderful flavor. It was a little dry, although I only used 1 3/4 cans of broth. We ended up using a can of cream of chicken soup as gravy & it tasted wonderful with it. DH thought it was good, so overall, it's a good recipe (with the herb additions) & I'll make it again.

Grilled Delmonico Steaks

This was very good! The only changes that I made was that I didn't have any steak sauce, & I used Montreal Steak seasoning (a little spicy). I used it to marinade a couple of chuck steaks, which are known to be a little tough, but not with this marinade! I will definitely use this again!!

Gramma's Apple Bread Pudding

Portobello Pot Pie

My daughter (veget) really liked this & surprisingly, my hubby (meat/potato man) also liked it. Didn't change much from the original. Used 6 medium potatoes instead of small & added extra soy sauce. Am planning on adding sliced water chestnuts next time, for a little more texture. Definately planning on having it again!!

Southern Living Magazine's Chicken-Fried Steak

Absolutely wonderful!! I have looked high & low for a good chicken fried steak recipe & have finally found it! I had 4 beef & 4 pork cube steaks/cutlets, so all of them. Due to other reviews, I added alot of cracked pepper, onion powder & garlic powder. My hubby said they were just as good as what he gets at his fave restaurant. Make sure that your oil is high enough in skillet to cover the meat & must be hot enough, as well (won't be overly greasy that way).

Apple Crisp II

We love this recipe! This is the only apple crisp recipe that I use. Like the others, I omit the water & peel the apples. I also double the topping, as it "makes" the recipe! I don't really measure the cinnamon, however, as we love cinnamon & also add a touch of nutmeg to it. Gives great flavor!

Pineapple Upside-Down Cake VII

The hubby was a little skeptical when he saw it in an iron skillet. But, after tasting it, he & the kids admitted that it was the best pineapple upside down cake that they've had! Made a couple of changes, though. I used crushed pineapple instead of rings, used only 3/4 C. - 1 C. of brown sugar & had to bake it a little longer (toothpick doneness). I just made a second one going by the actual directions & have decided that I'll stick with my changes. There's way too much brown sugar & it spills over in the oven. The first one was much better. Still a very good basic recipe! Thanks Anne!!

Japanese Chicken Wings

Very Good!! I made it w/chicken breasts & the hubby loved it & has asked if it can be a "regular" weekly meal (he doesn't normally like chicken). I did make a couple of changes. I cut out the butter (didn't see a need for it), doubled the soy sauce & water, cut the sugar down to 1/2-3/4 C. (otherwise too sweet), cut the vinegar to 1/4-1/2 C., used minced garlic (hate the powdered stuff) & added 1/2 t. mustard powder. I turned the chicken breasts a few times during baking to make sure they were coated with the sauce, served over rice & sprinkled cashews on top.

Award Winning Soft Chocolate Chip Cookies

This is one of the best choc. chip cookie recipes that I have come across! The only changes I made were I used white chocolate pudding (no vanilla in the house), real mexican vanilla, and eggs fresh from the farm. Very Good!! Everybody loved these!

Salisbury Steak

Very Good! Didn't have french onion soup or ketchup, so I used a can of regular beef broth & Heinz 57 instead. The Heinz 57 gave the gravy a good "kick". Hubby really liked it. Guaranteed to make it again. Thanks Kelly!
