Banana Chocolate Chip Cookies

Zucchini Cakes

Very good, but I don't necessarily think they taste like crab cakes since there isn't any crab! Quite tasty though and I used corn flake crumbs instead of bread crumbs because that's what I had. I also used two eggs to make them hold together a little better. I didn't dip them in cracker crumbs either and still delicious.

Zucchini Chip Cupcakes

Moist and delicious. I omitted the nuts, but otherwise followed the recipe. I iced them with good 'ole canned white icing and they were very good. Kids gobbled 'em up too.

Pineapple Stuffing

A little too soggy/buttery the first time I made it, but I didn't give up, because I liked the idea and the combo. My suggestions after working with it several times: -double the bread (I use sweet rolls or whatever I may have on hand) and cut up and let dry for several hours -Use only 1/4 cup white and 1/4 brown sugar -Saute a few onions and celery and then add in with the pineapple -Sprinkle a little nutmeg in with the onions/celery These changes make it a little more like a side dish as opposed to a dessert!

Peach Cobbler I

This was rather tasty (with a side of vanilla ice cream), but it wasn't very pretty to look at. I doubled the dry ingredients as suggested by others, which was good (I like extra topping) and I ended up using about 6 cups of sliced peaches because 4 cups didn't seem to even get one layer of peaches on the bottom of my 9x13 pan. Also, for my own additions, I added about 1 Tbsp of brown sugar to the peaches, and 1/4 tsp ground cloves and 1/2 tsp vanilla extract to the dry ingredients, and it turned out with a good flavor. Overall, I might make this again for family, but not for a holiday event or for friends, because it just looked like a brown cake on the top....
