Microwave Peanut Brittle

Reviewed: Dec. 17, 2008
WONDERFUL! I have a 1000 watt microwave so adjusted the times as follows with perfect results every time: first time 3 1/2 minutes, after adding peanuts another 2 minutes, after adding butter and vanilla 1 more minute. I added a heaping teaspoon of baking soda and quickly spread on the pan which I had coated with non-stick cooking spray. I also made a batch with slivered almonds and it was great. Thank you! debby

Restaurant-Style Hashbrown Casserole

Reviewed: Jan. 20, 2005
Just what we were looking for - like the recipe from a popular restaurant we love. I did make two changes which we feel improved the recipe. I added 2 cans of soup instead of one - and 3 cups of cheese instead of 2. thanks!

Spiced Ham Loaf

Reviewed: Sep. 12, 2004
This is by far the BEST HAM LOAF recipe ever. The only change I made was to add some pineapple juice to the glaze, and lay three pineapple slices on the loaf before baking.

Easy Chocolaty Brownies

Reviewed: Aug. 5, 2004
FANTASTIC RECIPE! I made a few minor changes - I used 2 cups of chocolate chips instead of the m&ms (one to mix in the brownies, one to sprinkle on top). I also added a cup of chopped walnuts. I baked them in a 13x9 pan for about 40 minutes - delicious!

Easy Vegan Peanut Butter Fudge

Reviewed: Jun. 5, 2004
I was not looking for a vegan recipe - just a quick and easy one. This was perfect. I used real butter, smooth peanut butter - and then added 1 cup chopped nuts and sprinkled 1 cup chocolate chips over the top while it was still warm. I waited a few minutes and swirled the chocolate with a knife - very nice!

Wild Blackberry Pie

Reviewed: May 26, 2004
Very easy and delicious! Here are the changes I made. I was in a hurry so used a Pilsbury refrigerated pie crust (not the frozen kind). I also used frozen blackberries as they are not in season here yet. I used 1/2 the amount of cinnamon. I brushed the top crust with a little water and sprinkled some sugar for a nice glaze.

Congo Bars I

Reviewed: Mar. 23, 2004
Wonderfully easy recipe! They are like butterscotch brownies and chocolate chip cookies combined! I needed a large batch of cookies for the kids in our school play and this was perfect. I used all the chocolate chips and then one cup butterscotch chips instead of nuts.

Chocolate Banana Cake

Reviewed: Feb. 1, 2004
This is DELICIOUS! I don't understand the person who said it did not turn out - the only way you could mess this up is if you did not measure the mashed bananas. I used 3 bananas and that was exactly one cup. I also added a handful of chocolate chips. I made a basic buttercream frosting. My family LOVED it!

Peanut Butter Cornflake Crunch Bars

Reviewed: Jan. 25, 2004
Excellent recipe! I had no problem with this recipe because I crunched up the cornflakes before I mixed it together. That way they are smaller pieces that blend in more easily. My family LOVES THEM!!!

Sausage Balls

Reviewed: Dec. 31, 2003
YEAH! I have made sausage balls before but these are the best I have tried. I added a little sage and dried onion to the mix, it takes a lot of muscle to get the mixture well blended - but then they are perfect!

Breakfast Sausage Casserole

Reviewed: Dec. 29, 2003
We loved this recipe. I have made a breakfast casserole for Christmas morning for many years. I lost my old recipe and tried this one. I used the dried bread from two boxes of packaged stuffing mix (did not use the seasoning packets). It was marvelous!

Soft Sugar Cookies V

Reviewed: Dec. 29, 2003
Excellent recipe! The only change I made was to add grated orange rind to the dough. It was easy to handle, did not stick to my rolling pin - and my family raved about the cookies. I iced them with a regular powdered sugar icing and decorated them for Christmas. Thanks!

Hot Mocha Drink Mix

Reviewed: Dec. 20, 2003
WONDERFUL! Here are the changes I made which really improved the flavor: 1 1/4 cups sugar instead of 1 cup 2/3 cup or coco powder instead of 1/2 1/2 teaspoon cinnamon On the directions I changed it to 3-4 heaping teaspoons per cup. DELICIOUS - makes wonderful gifts when you put it in jars and add a ribbon.

Microwave Oven Peanut Brittle

Reviewed: Dec. 16, 2003
I tried this recipe twice - maybe its me, but I could not get it right and did not want to waste any more ingredients trying again. The first time I cooked it 6 minutes and then the 3 minutes. It did not quite get hard enough - chewy and sticks to your teeth. The second time I cooked it 7 minutes and then the 3 minutes and it almost burned. I will look for another microwave peanut brittle recipe. Thanks anyway.

Chocolate Cookie Mix in a Jar

Reviewed: Dec. 14, 2003
Great recipe - I had a hard time getting it all in the jar but that could be my fault as I bought the right size jars, but they were not the wide mouth.

Banana Pudding III

Reviewed: Nov. 9, 2003
Fabulous recipe! I made the following adjustments and it was perfect. I did not have whipping cream so I substituted an 8-ounce container of Cool Whip. I folded most of the container into the pudding as directed, reserving about 1 cup. I increased the amount of cookies to about 50. I did not dip the bananas in lemon juice because my daughter hates lemon. I just used bananas that were not too ripe. I spread the reserved cup of cool whip on top. YUMMY!

Easy Delicious Old Fashioned Coleslaw Dressing

Reviewed: Oct. 22, 2003
Good dressing - very easy. I like it better if you omit the salt and pepper and add a tablespoon of sugar. I used fat-free maynonaise instead of salad dressing.

Apple Cinnamon Oatmeal Bread

Reviewed: Oct. 7, 2003
Thank you Monique for sharing this wonderful recipe! The only changes I made were to add one apple, peeled and chopped. I also put 1 1/2 packets of oatmeal in the recipe and sprinkled 1/2 packet on top. I won FIRST PLACE at our county fair with this recipe!
