Spinach Enchiladas Verde

I used quite a but more sauce than it called for. Slightly heated the tortillas (covered with wet paper towel) in microwave so they wouldn't break when rolling up. Delicious.

Five Minute Ice Cream

This is an amazing recipe! Why? It is SO quick, easy, and delicious. Also, the main ingredient is strawberries, which makes me feel better about its healthiness. This was a hit tonight. We topped with a little whipped cream and chopped pecans. I never got it to firm up like in the picture even though I kept adding more and more strawberries. Next time I'll probably leave in the freezer for a little while before serving.

Butternut Squash Bisque

This came out great using chicken buillion instead of veggie broth. The soup would be fine without the heavy cream; I used some half-and-half since that's what I had on hand. I imagine this is about as good as butternut squash can get.

Favorite Black Walnut Cookies

These are great! No changes to be made. I cut the chilled, rolled dough with floss like my Momma taught me. Works great because the dough doesn't get mis-shapen from slicing.

Coconut Macaroons German Style

These were pretty good and two-thirds of them were gone the first night. I used tin foil instead of parchment paper, which worked well as long as the cookies were completely cooled. I also baked them at least twice as long. This made them mostly crispy with a little bit of chewiness in the center. Will make again.

Fast Creamy Tomato Penne

This recipe is not SUPER exciting, but has a little bell pepper flair that we liked (we are not bell pepper fans). This is definitely a quick, tasty alternative to spaghetti.

Artichoke and Tomato Chicken

Turned out great! I cut my LARGE chicken breasts in half. Next time I will make sure my chicken is patted dry, and I will substitute sour cream for some of the mayo.

Jambalaya With Shrimp

I thought this was great and I enjoyed making it. However, I don't think I could get away with making it again because my husband said he'd rather have Crawfish Etoufee (sp?) if I was going to make something like this. He and my bro-in-law still liked it though.

Fudge Bars

Cured my craving for chocolate. Be sure to cool completely like it says, if you want to separate them without making a mess. They're gooey!
