Chocolate Pudding Fudge Cake

WONDERFUL!!!!! I can't say enough about this cake. I took it to a potluck and recieved alot of compliments...mostly prople asking that I make it again...soon. One gentleman told me it was the best cake he had eaten in more than 10 years. :) Thanks for this one! It's a keeper!

Marinated Grilled Shrimp

LOVE this one!!! Great flavor. In fact this marinade would be good on just about anything, veggies, chicken and, of course, shrimp.

Avocado Salsa

This was not that great, maybe I was expecting more of a Mexican type flavor . I added Ro-Tel tomatoes to give it some spice. Would I make this again...probably not.

I thought this was OK. Actually, the only thing I didn't care for was the lack of spice. With more of a kick, this would be a knock out. I was sceptical about heavy cream, but it worked wonderfully. I will make this again, but with more spice...

Vegetarian Phad Thai

My daughter and husband loved this dish. I did however, make some changes based on others' reviews. I lowerd the amount of peanut butter and sugar to 3/4c and used lime instead of lemon. Great dish! I will make it again.

Tom Ka Gai (Coconut Chicken Soup)

We loved this soup! Even my 8 year old asked for seconds. My husband said he thought it was even better than our favorite Thai restaurant. The only changes I made were to use 2T soy sauce instead of 4T fish sauce and chicken stock instead of water. Do yourself a favor and make this soup!!!!!

Pumpkin Cheesecake Pie

LOVE this recipe!!!! I made a couple of small changes, however. I topped the pie with chopped pecans before baking and served it warm as a side dish. That may sound strange, but this pie is not as sweet as regular pies. I would not use this as a cold, whipped cream topped kind of thing, but as a warm dish, it was AMAZING! Lots have asked for the recipe. Thanks!
