I'm a happy House Wife living in the South of England with my husband.
My favorite things to cook
My signature dish is curried chicken with potatoes. I also like making my own bolognaise sauce. I also make an awesome Tortilla EspaƱola like my Spanish Grandfather taught me how to make.
My favorite family cooking traditions
I am of Cuban decent and traditionally Cubans love to eat and are passionate about food. Some of the foods I've grown up with are as follows: Sopa de Pollo (Cuban chicken soup), picadillo (Mince beef hash), Sandwiche Cubano (Cuban Sandwich with roasted Pork, ham, Swiss cheese, pickles and a dash of mustard), Arroz-con-Pollo (Spanish chicken and rice) and Tortilla EspaƱola.
My cooking triumphs
Chicken curry; My signature dish is chicken curry but I also make a good Spanish Omelet. Other favourite dishes that I've mastered learning are Toad in the Hole and Cuban bread. Apple turnovers Pumpkin Pie Chocolate chip cookies
My cooking tragedies
yeast donuts (they were a bit too yeasty) (must learn to make them)

Cornmeal Mush
I used to have this as a child and loved it. My mother, a Cuban cook, cooked in a big pot; She put 1TBS vegetable oil, salt and mixed the polenta (Cornmeal) with water before adding it to the pot. I added 1 cup of sweet corn kernels in and sprinkled some parmasean cheese. Delicious. I also used to eat it by pouring milk on top. I didn't like it sweet, though. Loved as a savoury hot breakfast cereal. I used to call it 'Goldilock's Porridge' LOL :D

Creme Filling I
I too added vanilla; I used unsalted butter for the shortning and used powdered icing sugar instead AND made it chocolate by adding a few teaspoons of baking cocoa. My Phillips Mixer mixed it thouroughly yet I found some of the butter didn't blend well. It tasted nice, though

Hasty Chocolate Pudding
Awesome recipe! I live in England where 'pudding' describes the whole of desserts and not just a creamy custard. I miss the delightfully creamy Jel-O chocolate pudding that I grew up with in the States and this recipe recreates that recipe extactly!!! Now I can make my favourite dessert from scratch! I've made this often for my husband and I and on days when I want to whip up an extra fast dessert. Excellent recipe!! I did have to adjust the time on my mircowave and keep an eye on the pudding basin as it cooked. I have a 950 Watt microwave. but all in all it made me a mighty fine pudding!
