Excellent recipe. It baked well in a 9x13 pan. I altered the frosting a bit. 3 oz cream cheese, 2 Tbsp butter, 1 Tbsp maple syrup and 1 cup powdered sugar. I sprinkled walnut pieces on top of frosting for a nice finish.

Mexican Stir-Fry

Very good. My kids, husband and I all enjoyed it. I made it almost as it, only using black beans and omitting the cayenne and jalapeno.

Mike's Portuguese Tuna Rice Casserole

This was pretty good. I left out the hot pepper sauce and added diced bell pepper. My kids ate it. My husband and I liked it as well.

Potato Chocolate Cake

Banana Chip Muffins I

Delicious. These muffins bake up high with golden brown tops; very appetizing. I took these to a social gathering and they were consumed very quickly. The batter did not look like it had enough chips, so I doubled the amount.

Apple Danish Cheesecake

I made this for my adult Sunday school class and I could not cut it fast enough to serve everyone. I did not end up getting a piece, but I managed a few crumbs. It was very tasty and those who had a piece tell me it was excellent.
