Squash Casserole with Crunchy Pecan Topping

I used coconut oil instead of butter (did the same for basting my turkey.) It works beautifully. No sticking to the pan. I wish I had made twice as much topping and used an 11 x 13 dish and spread it over even more of the squash. It was that good!

Stuffed Peppers With Quinoa

With the changes I made, I give this 5 stars. I used Quinoa instead of rice. Quinoa is very low in Cholesterol and Sodium. It is also a good source of Magnesium and Phosphorus, and a very good source of Manganese. One cup has 8.14 grams of protein. I also used 1/3 cup of taco seasoning, one can of drained and rinsed black peppers and topped the cooked peppers with salsa. They were delicious and very nutritious!

Stuffed Bell Peppers

Best Chocolate Chip Cookies

This recipe states it makes 24 servings. I think it assumes 2 cookies per serving. For 24 cookies, increase baking time. I made 24 larger cookies and baked them for 14 minutes.

Scandinavian Almond Bars

This is a great recipe! I've been to two cookie parties in the past week and these cookies were a huge hit. I use the following ways to cut down on clean-up. I use parchment paper, a rolling pin, a pizza cutter and a 3x5 index card. Wrap a piece of parchment paper around the log. Roll flat with the rolling pin. A 3x5 index card makes a nice tool for measuring width. Sprinkle almonds onto dough, press down into dough with parchemnt paper. Bake on parchement paper and voila! no clean-up. TEN minutes after removing from oven, use pizza cutter to cut strips into diagonals. Use a good quality ziplock bag to ice cookies. Put icing in bag, press out air, close and cut a TEENY hole in one corner. Again, no clean-up!

Burrito Pie

I just served this for dinner and it was a big hit. I used ground turkey instead of beef and replaced the green chilis with chipote peppers in adobo sauce to compensate for the lighter flavor of the meat and it was great! The chiopoltes needed to be choppped up, but it was well worth the extra step. I also mashed a can of black beans and added them to the refried beans, smearing them on the tortillas as others suggested, but wonder if it would have held together better with the beans in the mix. I used 1/2 the recipe for homemade taco seasoning found on ths site because I didn't have a packaged version on hand. Next time I may just make the filling and use that in burritos.

Burrito Pie

Best Cream Of Broccoli Soup

This a good basic recipe, but needed more oomph for my family's tastes. So, I added 8 oz. grated pepper jack cheese, 4 sliced cloves of garlic, 1 grated carrot and 2 tsp. of worcestershire sauce. The flavor was great!

Almond Toffee Bark

It is VERY important to bring this up to 285 degrees, as stated in another review. I used a pan that was too small and when it started to bubble up, I took it off the heat at 255 degrees. The toffee part had the consistency of cookie dough, very messy! The chocolate part, however, was so good that I scraped the toffee off and kept the hardened chocolate.

Lamb and Winter Vegetable Stew

This is declicous but WAY better even if you make it a day ahead and let it marinate overnight. Everyone I served it to has raved about it and one of my guests gave some serious hints about me sharing my leftovers. I added extra garlic and onion and also ground some rosemary and added that , too, about the same amount as the thyme. YUM!

Best Cream Of Broccoli Soup

I used broccoli from my garden, stems and all and wish to advise you that If you add stems, please make note to do the following: Cut them very small (chopped size) and cook them very well, otherwise your soup may have fibers in it. If it does just put your blender on liquidate and let it run for a little while. Hold out the little florets of broccoli until you have finished cooking and blending the soup and then add them back. They won't take long to cook and will add some interest. I added Chinese five spice to the soup and it was a great addition.
