Basic Cheese Polenta

Reviewed: Aug. 16, 2008
This is a great basic polenta recipe..my favorite thing about it is the idea of mixing the polenta in the cold water first then adding to the boiling water. This saves having to 'sprinkle' the polenta into the boiling water (like every other polenta recipe I've seen) and worry about lumping! For that alone I'd like to thank the person who submitted this recipe.

Moroccan Salmon Cakes with Garlic Mayonnaise

Reviewed: Feb. 29, 2008
This was great because it was so different and the tastes went really well together. I squeezed some lemon over the cakes before serving.

Never Fail Biscuits

Reviewed: Dec. 16, 2007
So good and so easy! I made these without cream of tartar because its not available where I'm living and they were still nice and fluffy. Sometimes I add grated cheese to the dough & brush with garlic butter for the 'red lobster biscuit' taste.

Peppy's Pita Bread

Reviewed: Dec. 16, 2007
I found making these pitas a very difficult experience. I'm not an expert in it, but I have made breads with yeast before that turned out fine. I definately would not advise this recipe for yeast novices. My problem occurred after rolling them out and letting them rise again. It never happened! Then they got extremely sticky so I just quickly threw them in the pan. They did not puff up at all, but in the end they turned out edible and rather ok, more like naan though. However the frustration involved made it not really worth it for me, personally I probably wouldn't make these again.

Easy Vegetarian Red Beans Lasagna

Reviewed: Dec. 16, 2007
I was a little doubtful about this at first because it didn't have a lot of cheese inside, but it was great! The sauce on top really completed it! Next time I'll use 2 cans of beans (mashing one for texture) because I would have liked it to be a bit thicker.

Five Bean Casserole

Reviewed: Dec. 16, 2007
I have made this recipe multiple times and every time it turns out so good! I love that its relatively simple as well. I normally don't use all 5 types of beans, just whatever I have on hand (kidney, cannelloni & pinto usually).

Spinach and Rice (Spanakorizo)

Reviewed: Dec. 16, 2007
This was ok, but not sure if I would make it again. Even with the fresh lemon and feta, it still came out a little too bland for my tastes.

Cafeteria Carrot Souffle

Reviewed: Jul. 30, 2007
Such an interesting dish! The only thing is I would never consider this a side dish to a meal - too sweet. I ate it as a dessert/afternoon sweet and it was perfect as such. If you don't like sweet dishes with your meals, I would eat is this way rather then reducing the sugar.

Pan Fried Halibut Steak with Light Green Sauce

Reviewed: Jul. 7, 2007
This is such a great recipe, both my husband and I love it - especially how easy it is to prepare. We've made it many times with different types of white fish and its always turned out great. Better to use fresh lemon then lemon juice. Its great when served with mashed potatoes or couscous since both absorb the sauce nicely.

Down Home Baked Beans

Reviewed: Jul. 7, 2007
I loved the taste of these, but 4 stars because its kind of cheating to make baked beans when you already start with canned baked beans! Outside of the US these were hard to find, so I used small white beans instead. Had to add something extra to give it more sauce though, so I put in ketchup and worcestershire sauce - delicious!

Homemade Black Bean Veggie Burgers

Reviewed: Jul. 7, 2007
These were delicious, but had some problems with the mixture not holding together. The only kind of black beans I could find were in a 'chili' sauce (not living in the US)so it made the mixture too moist - however gave it a great flavor! Next time I will add more breadcrumbs and make the patties smaller so that they don't fall apart when I turn them over.

Curried Honey Mustard Chicken

Reviewed: Jul. 7, 2007
Great recipe! Loved the strong taste of honey mustard + curry. I used turkey instead of chicken and made in in the pan rather then baking in the oven and turned out fine. Thanks!

Chilled Pea Soup

Reviewed: Jun. 3, 2007
Delicious recipe! I'm not usually a big fan of peas, but this was great. I think the yogurt gives it a special touch. I used canned peas instead of frozen out of necessity and that worked out fine. Based on my taste test before the soup went into the fridge to be cooled, I think it would have been just as good served warm too.
