Herb Rubbed Sirloin Tip Roast

This recipe earned my first review! Not a fan of pork normally, but this was incredible. Followed recipe exactly (doubled rub because I did two 2 1/2# roasts). I cooked on raised rack above pan filled with 4 cups of beef broth like previous reviewer suggested. Cooked at 300 F (convection roast) for a little over an hour. Removed roasts at 130F and wrapped in foil for 15 minutes. Made gravy out of broth and drippings. Incredible.

Jamie's Cranberry Spinach Salad

Love this salad. Have made for company several times and everyone compliments it. I top with crumbled blue cheese.
