Cake Balls

I went back and forth about trying these. Some reviews were thumbs up and some thumbs down. But, since it was only 3 ingredients, why not. My family is glad I made them. I followed a lot of the suggestions of other reviewers. After I baked the cake (Red Velvet), I let it cool for about 5 minutes. Then I used a fork to run through the cake and break it up into crumbs. I then transferred the crumbs to a bowl and added the can of frosting (cream cheese). It made a gooey mix. I then made the cake balls with my Pampered Chef large scoop and put them in the freezer for about an hour. I used Candiquik - chocolate candy coating (16 oz.), found at Walmart. You need it all, not just 3 oz. I found that the chocolate set real fast, maybe because the balls are cold. So if you are using sprinkles, have them ready. My family has requested them again, so I'll be making some more soon. Thanks for the recipe! Kids especially love them!

Balsamic Roasted Pork Loin

I love when I can find a recipe so easy and equally delicious! It's a great recipe to serve company. I cooked a 2.7 lb. roast for 1.5 hours at 350. I marinated it for 2 hours. It was not over powering with the Balsamic Vinegar. UPDATE: I recently made with boneless thick pork chops and it was just as good. I marinated them for about an hour and used my George Forman grill. EASY!

Chuck's Favorite Mac and Cheese

I halved the recipe to make in a 8 x 8 pan. Turned out very good. My 11 year old didn't like it but my 9 year old did. I couldn't decide if I should add milk or not, as per other reviewers. In the end, I added about 2 Tbsp. of milk and extra cheddar cheese. This is the kind of Mac-n-cheese I grew up with; the baked kind. It was even good the next day.

Watergate Cake I

I always think of this cake around St. Patrick's Day. It's hard to tell from the picture but it's a light green from the pistachio pudding. I omit the walnuts and the frosting and add mini chocolate chips. Also, I only use the amount of oil that is called for on the back of the cake mix box. One cup of oil would have been way too much. Quick, easy and very moist.

Big Soft Ginger Cookies

Love them...and I didn't even have molasses. I had to substitute 1/4 cup of maple syrup and 1 tbsp of honey for the molasses. I left out the 1 tbsp of water. Super soft and delicious. I did freeze the dough for 30 minutes for easier handling. My family thanks you for the recipe. Will try next time with molasses. Update: I tried it as written, except, left out the water, and they were wonderful! I made a glaze with powdered sugar to drizzle over them. Love these!

Whole Wheat Sweet Potato Muffins

Only two people in my family like sweet potatoes, but all four of us really liked these muffins. I reduced the honey to 3/4 cup and used 1/2 cup of 2% milk instead of yogurt. Oh, I also cheated for the sake of ease and used canned yams. I will cut the topping by 1/2 next time. There was too much left over. Thanks for the recipe.

Baked Whole Cauliflower

Wonderful recipe! My husband offered to wash the dishes if I go and give this recipe 5 stars. Who knew a good cauliflower recipe was the way to a man's heart. I did have to cut the cauliflower in half. I followed the recipe as submitted.

Mini Pineapple Upside-Down Cakes

Very pretty dessert. I used a jumbo muffin pan and used the pineapple rings. If you do the same, you will also need a 8 oz. can of pineapple rings. There weren't enough pineapple rings in the 20 oz. can for 14 jumbo muffins. I used pineapple cake mix and the juice from the canned pineapple rings. There wasn't enough juice from the pineapple rings so I used water to make up the difference.

Pork Chops with Dill Pickle Marinade

I used my George Forman grill and cooked the pork chops for 6-7 minutes. I marinated them for 8 hours and they weren't over powering at all. Very good!

Whole-Wheat Chocolate Chip Cookies

I'm surprised! I didn't think I would like a cake-like cookie. I used only whole wheat flour (3 cups). I used a larger than average chocolate chip (Ghirardelli Bittersweet) and think next time I'll use mini-sized or normal sized chips. I will also only put in 1 to 1 1/4 chips. I had extra in the bottom of the mixing bowl. The dough is stiff, but the cookie is very good. Also, used Splenda. Thanks for the recipe.

Orange Crunch Cake

I made this cake today to test it before taking to a family reunion. I passed it out to neighbors to get a vote and everyone loved it. I used a different recipe for the frosting (Golden Orange Frosting) from this site. Some of us thought the frosting was a little too sugary others loved the frosting. UPDATE: Altered the recipe. Baked in 9x13 pan and used chocolate cake mix. Prepared cake mix according to directions on box. Put a layer of chocolate chips over the batter, about 1.5 cups. Then made the crunchy mix, step 1, and sprinkled over the chocolate chips. Patted down with a spoon and baked for 35-40 minutes. Used Coconut-Cream Cheese Frosting, from this site, minus the coconut part. Oh so rich! Get your milk ready! Will make again!!

Slow Cooker Beef Stew I

Very good beef stew. An hour before it was done, I mixed 1 tbsp. cornstarch with 2 tbsp. water and added it to the crock pot. Also, I will half the pepper. It was way too peppery for us. Will make again.

Brunch Strata

Nice change from the typical breakfast casserole. Lots of chopping and prepping but worth it. Very tasty! Took other reviewers advice and assembled the night before and put in the fridge. Then this morning cooked it at 350 for about 50-55 minutes. I used a 15x10 pan for the brunch I was going to and had enough to also fill a pie plate to make later. I also used only 1/4 cup oil not 1/3. Remember to drain your veggies before adding to the mixture.

Sweet Bacon Crackers

This is such a fast appetizer to make! I was scared at first to use 1 tsp. of brown sugar. It seemed to much, but you need it to glaze the bacon and cracker. I baked mine a little longer and there were still some crackers with brown sugar that hadn't melted, so I broiled them at the end for just a few seconds and it worked perfect. Everyone loved them!

Greek Lemon Chicken Soup

Really enjoyed this soup! Even my kids, ages 10 and 12, liked it. I cut the recipe in half thinking 16 serving was going to be too much, but it just made 4 bowls of soup. Next time I won't half it. I scooped the rice in the soup bowls first and then added the soup. I also doubled the veggies and chicken and reduced the yolks to two (I halved the recipe). I also used only half of the amount of chicken soup base (bouillon). Make sure you use low sodium chicken broth. Yummy!
