Easy Corned Beef and Cabbage

I guess I haven't had corned beef very often, but I admit I was disappointed that my corned beef wasn't a bit more tender than it turned out. I tried a flat cut and a point cut thinking I would learn which I liked best. Neither was very tender after 8+ hours of cooking. I also learned that the green cabbage looks far better with the corned beef than the red that I tried. (It will dye your potatoes and carrots purple) So make sure you buy the green cabbage. The flavor was pretty good, it just wasn't as good as I had hoped.

Chef John's Pineapple Upside-Down Cake

It looked just like the picture--it was beautiful, but it turned out quite dry. I cooked it even less time than mentioned in the recipe, but it was quite crumbly and dry. I may give it another try because it looked so nice. . .

Spicy Bacon Deviled Eggs

I agree with the first reviewer, the cheese just gets lost in the other flavors so I'll omit it next time. My bacon had a strong smoky flavor which overtook the wasabi so I would probably use less bacon or a milder bacon if I make this again. The wasabi really does add a yummy kick to this recipe. It is easy to put the thick filling back into the eggs with just a tablespoon.

Slow Cooker Chicken Stroganoff

Italian Vegetable Soup

I admit I did have to change a few things in this recipe including ommitting celery, carrots, and using jalepeno pepper flavored tomatoes instead of regular, but if you like a little bit of spice the jalepeno tomatoes were a great addition.

Barley, Shrimp, and Corn Salad

Sooo good! I loved the chewiness of the barley and the over-all mix of flavors. I made this recipe farely close to as written only I used about twice as much lemon juice, because I love the citrus flavor. I even used fresh thyme, but I would recommend using less thyme than listed. I put in the small thyme leaves and felt like I was biting into a Christmas tree when I would get an entire leaf. Chop it finely! But next time I will use less thyme and try using dried thyme to see how the flavor compares. Over-all I loved the unique combination of textures and flavors!

Slow Cooker Chicken Pot Pie Stew

Not bad, I'm not sure if my potatoes were just large, but I used the amount the recipe called for and felt that the mixture didn't have quite enough sauce, so I added a little more soup to mine. It is plenty salty, so I would recommend using less bouillon. I halved the recipe and only needed a cube and this was perfect for me. Very filling and I would imagine this is quite a bit healthier than the average chicken pot pie. Oh, and if you don't want to wait for the crock pot method, I cooked up my chicken and boiled my carrots and potatoes in a separate pot. Then I put the other ingredients in a pot and added the cooked chicken and potatoes, made my biscuits, and then ate it about an hour later.

Pozole in a Slow Cooker

I had heard tell of how good traditional pozole is and this was really good, just not quite as good as I imagined it would be. I wonder if this could be because I had to use all dried peppers, except for the fresh pasilla peppers I found. However, it was definitely yummy enough that I would make it again. I tried it both traditionally with cabbage and lime juice, and gringo style with sour cream, cilantro, and cabbage and both were good, but I did like the flavor and contrast that both the sour cream and cilantro gave it.

Creamy Chicken Gnocchi Soup

I really enjoyed this soup, but it had a sweet flavor that I was not expecting. I guess it was all the carrots and the nutmeg it had in it, but it is a nice flavor for fall. Here are a few of the changes I made to this soup: I thought I would try cutting down on the fat and used evaporated milk instead of the half and half suggested. I also added some chicken seasoning which I had on hand, after feeling like the end product was slightly bland. Oh and I didn't have gnocchi, so I found a great gnocchi recipe on this site and it turned out to be fairly easy to make.

Chicken Lo Mein

I liked the flavor of the sauce which had a strong ginger flavor. I added a frozen stir fry veggie mix to the chicken instead of mushrooms and it was delicious! I also halved the amount of sugar as suggested by other all recipe members. My sauce was a little thin, but I used flour instead of cornstarch as the thickener so that could be why.
