Catherine's Spicy Chicken Soup

This is delicious! Can't wait until my husband gets home to try it. Add some tortilla chips and maybe a little shredded cheese and we are all set. I think my husband will say that it's not spicy enough but since our 4 yr old daughter would not appreciate it if I kicked it up...it is perfect the way it is. I think there is enough that I will be freezing some.

Chicken Wing Dip

This dip is awesome! We tailgate for football games all the time and this is perfect for the occasion. I use the precooked chicken breast that is already diced up and just throw all of the ingredients into a small crockpot. It is eaten up everytime!

Chicken Enchilada Soup III

This recipe was great! However, I was looking for a heartier soup so I added a few things: one can of black beans, one can of yellow corn, fresh cilantro, and one pack of cooked spanish rice. Served it with tortilla chips...will make again!

Southwestern Chicken Lasagna

This recipe was great! I used pre-cooked chicken breast strips because I was short for time. I think they are made by Tyson. Instead of using 2 cups of spaghetti sauce and tomato sauce...I just used a whole jar of spaghetti sauce and one can of tomato sauce to avoid wasting the remaining spaghetti sauce in the jar.

Charline's Sweet Potato Casserole

This was the first time I had ever made a sweet potato casserole. The end result was great! I have to admit that I was confused when making it b/c the recipe says to mash the potatoes and then later says to bake until they are tender. My thought process was that I should boil the potatoes in the beginning in order to mash them but I didn't....I just cubed them. While baking it, it looked like soup and my husband thought I messed something up :) but when I took it out it thickened up like a casserole. Will make again!

Buster Bar Ice Cream Dessert

My husband and I are huge ice cream fans. I gave this recipe a shot and it turned out great! It was so easy to make. I also put toffee chips on top of mine. I think that the next time I make it I will use more ice cream than the recipe suggests (thicker slices) so it does not seem so rich....But I am not complaining, just my preference.

Asparagus, Chicken and Penne Pasta

I love asparagus and chicken...so I was bound to enjoy this recipe. I added 3/4 of a can of cream of celery and 1/4 cup of chicken broth to this recipe because it was too dry for me without it. I enjoyed it and it was pretty easy to make.

Better Than Sex Cake II

This cake is great! I bought caramel ice cream topping that was in a squeeze bottle. After I heated the caramel and sweetened condensed milk, I poured it back into the bottle and found it very easy to "squirt" the mixture into the slits. Also, I used a lot more caramel than the recipe called for (you can never have too much) and it was good! I also tried this recipe with a "Butter" cake instead and it was wonderful too!

Chili I

This chili was great! I only used 1 onion and 2 cans of beans, I am not a big fan of either. I used 1 habanero pepper b/c my husband likes his food really spicy. I will make this again!

Yummy Lasagna

I thought this was a good recipe. I had to adjust a couple of the ingredients. I used more sauce and less basil. I also used spicy pepperoni b/c my husband and I like our food with a little kick. I will make this recipe again!

Beef Barley Vegetable Soup

My husband and I really enjoyed this recipe. I am so clueless when it comes to cooking and had NO idea what barley even was (you should have seen me at the grocery store looking for it!). If you are just as clueless as I am, I finally found the barley (with some assistance) in the ethnic food section. I will make this recipe again.

Awesome and Easy Creamy Corn Casserole

I have made this recipe several times and it is wonderful! I planned on making this at my sisters house for Thanksgiving this year and when I got there I realized I forgot to bring the sour cream. Since all of the stores were closed we improvised and used cream cheese instead. It turned out perfect!. I get compliments on this recipe at family gatherings all of the time and it is so easy to make...just combine and bake!

Chicken Noodle Casserole I

I am not a great cook at all and my husband will agree! However, this was the easist meal to prepare and it did not take very long. It's only me and my husband and lets just say the whole dish is gone already because we ate half last night for dinner and packed the other half for lunch! Thanks Dawne, my husband and I really enjoyed this dish!
