Easy Chicken Enchiladas

Made this for friends who were returning from a trip,I knew they had made no plans for dinner. Mad it as a casserole and used black beans. They loved it.

Easy Mexican Casserole

Sent this to a pot luck dinner at church which I was to sick to attend. Friends returned thee empty dish and hadn't even gotten any as it was goobled up by those ahead of them in line. So I increased he ingredients by half and made two 8x8 and one small round casserole for friends & my next door neighbors. They loved it also.

Chocolate Eclair Dessert

I've been making this for many years with the cooked frosting,just recently tried the canned frosting. If you nuke the frosting for 10-15 seconds you can easily pour it over the last layer of graham crackers. I always refrigerate overnight. I use a large Corelle pan a tad larger than 9x13 so it takes almost all of a box of graham crackers and all the frosting. This is a favorite at pot lucks and it's always the first to go.

Eclair Cake

I've made this cake for more years than I care to think about. Always a big hit. A friend called asking me to make it again for a gathering of friends on Saturday.

Beefy Baked Ravioli

I've made this many times. I made some changes,whole bag of ravioli,8oz. shredded whatever cheese I have on hand,whole package turkey meatballs spread around,no additional tomatoes,double the sauce,added onion powder,kids won't eat it if they see onion,and garlic powder.9x13 dish,baked it covered 30 mins. uncovered and added cheese,back in the oven to melt the cheese. I always have sauce and several blocks of different chesse on hand because I never know when there will be a meal needed at church or the home of a friend who has lost a love one. Either this dish or my pasta salad,applesauce cake or eclair cake are usually what I make.
