Eggplant, Zucchini and Sweet Red Pepper Stew

This was delicious! Ended up having to skip the wine, but I'd like to try it with it next time. We used everything fresh from the garden for the herbs, zucchini and tomatoes, as well as throwing in a yellow crookneck as well. Perfect dinner for late summer garden goodies.

Amazingly Good Eggnog

We used 2% for the milk and half & half for the light cream. We left out the rum and just had folks add brandy when they poured a glass. The brandy added just the right kick to it. This one's going to be an annual favorite!

Butter Snow Flakes

Delish! Did not have orange zest, so I left that out and doubled the cinnamon. Worked perfectly in the Wilton cookie press and they look & taste great.

Absolutely delish. Instead of raw garlic, I added chopped roasted garlic. We use fresh linguine from the deli section at the grocery, and fresh parmesan. On the side, I offer a sauteed zucchini, crookneck squash and onion mixture that tastes wonderful mixed in. The kids prefer it without,which is why I serve it on the side. We also usually serve a cold protein with this: leftover grilled chicken or smoked salmon. Yum!!

Mimi's Smoked Salmon Chowder

Scrumptious!! My husband made this tonight. Followed the suggestions by other reviewers to use unpeeled red potatoes and added a can of corn. We had fresh salmon on hand, so used that instead of smoked. "pure PNW comfort food" indeed!

Restaurant-Style Buffalo Chicken Wings

Delicious!! We baked them on a gridden rack over a baking pan, 20 min per side @ 450 deg. Used Frank's Wing Sauce for most of them. Others thought the sauce too vinegar-y, but I thought it tasted just like wings at restaurants. For the kids, we left the cayenne out of the flour and used a sweet honey sauce. We'll definitely be making these again.

White Chocolate and Cranberry Cookies

Yum! We used almond extract because we had no brandy, and cut down just a bit on the white chips. Still a wee bit sweet, but they are good and the cranberries look festive!

Roll-Out Cookies

Wow, these came out perfect! We made them exactly per recipe. Love the light lemon flavor. My almost 4 yr old rolled them out and used the cutters, and even after her repeated rolling they came out just right.

Hearty Split Pea Soup

We love this soup; it's one of our favorite crockpot recipes. Like others, we add a couple cups of extra water and some chicken Better Than Boullion. We don't add the milk. Delish!

Guinness® Corned Beef

This was OK for me and our 2 yr old, but my husband went and made something else after tasting it. We will stick with the boiled version from now on. And yes, we used real Guinness. But the meat was way tougher than it is if you boil it on the stove with water and the spice packet. And the veggies tasted funny this way.

Baked Dijon Salmon

Autumn Harvest Soup

We didn't like this at all -- the ginger doesn't go well with the winter squash, it totally overwhelmed it. We ended up tossing the soup. I think without the ginger it may have been OK, but bland.

Absolutely Ultimate Potato Soup

This was sooooo good!! Very rich, so I'm not sure how often we'll be making it. We cut down a bit on the bacon (12 oz) and used center cut (less fat). Everything else we followed to a T and it was just perfect.
