Love to cook and have been cooking for thirty plus years. I worked in the industry for many years and studied professionally under Todd Hall (once head chef of Los Abrigados in Sedona). Worked at many 4 and 5 star restaurants in PHX including Cristopher's, Mancuso's at the Borgata, and 7800.

Anything I can hold still long enough to get some flame on it!
My favorite family cooking traditions
Mom makes pork and sauerkraut every year for new years eve day. It's for good luck througout the year and everybody has to have some, like it or not.
My cooking triumphs
Won second place in a chili cookoff this year.
My cooking tragedies
Potato gnocchi I tried to make once for my girlfriend. Didn't work so well and haven't tried since.

Easy Pizza Sauce III
This is a pretty excellent pizza sauce for as easy as it is. It's a winner hands down. Of course I jazzed it up a bit, but who doesn't like to use their imagination. I liked using San Marzano tomatoes. Thanks for the solid recipe!

New York Italian Pizza Dough
Best recipe for pizza dough I've found so far! Texture is what matters here and this has it. I've made it four times now. First time it was tricky working with but you figure it out. I've added flavors since, doubled it, halved it, it always works! Next time I'm substituting flat beer for half the liquid and see what that does, but I'm really having fun with this! Oh, and always toss it, don't roll it! Takes practice but it's fun and you'll get the hang of it! Awesome recipe! Kudos and thanks.

Beef Taco Skillet
I agree with some of the people here who didn't like this. Turn this into a casserole instead and use tortillia chips, taco seasoning for the browning of the meat, and everything else is fine. Bake in a 350 degree oven until tortilla chips start to wilt, then cover with cheese and bake an additional five minutes, all done.
