Delicious Ham and Potato Soup

This was SO easy and used ingredients I normally keep in the kitchen. It's easily customizable, as well, so you can add cheese (we did) and other veggies if you desire. The best part is, it was ready in under a 1/2 hour! I boiled the potatoes in chicken stock instead of using chicken bouillon granules, and it turned out perfectly. Definitely a recipe I will be using again and again!

Banana Cheesecake with Caramel Sauce

The texture was PERFECT. I used chocolate graham crackers for the crust, and added dark chocolate pieces and walnuts and omitted the caramel sauce (but it would have been fantastic with it as well). Thanks for the recipe!

Banana Frittata

These were so easy and had lots of flavor. I didn't use any of the butter or oil, and instead spooned them on to an electric skillet and made mini pancakes. Served with a dusting of powdered sugar and a zig-zag of chocolate sauce on top. Yum!

Chicken Enchiladas with Creamy Green Chile Sauce

My personalizations: I used whole wheat tortillas and didn't soften before filling and they still came out wonderfully! I did add 1/2 bag of frozen onion and red and green pepper strips (sauteed briefly to soften) to the chicken filling. The sauce is AMAZING. I didn't have all of the sour cream called for so I subsituted low fat cream cheese. I also didn't have any chiles but I used some jalapeno slices from a jar and added a little of the liquid to the sauce for flavor. It was perfect. Thank you so much for this wonderful recipe!

Slow Cooker Scalloped Potatoes with Ham

After reading other reviews, I changed this slightly. I used 1 1/2 lbs of small russett potatoes, a 16oz pkg of diced ham and 2 cups of shredded cheddar. I also used a can of cream of asparagus soup with about 1/3 c milk, instead of the cream of mushroom and water. I added chopped fresh parsely, spinach and garlic, and substituted a shallot for the onion. Most of these changes were because of what I had on hand. It was delicious, but it did come out pretty salty so I will probably omit that next time. A fantastic base recipe!

Jammin' Tarheel Chili

I added one green pepper and two seeded jalapenos. Also, I substituted diced jalapeno-flavored chicken sausages for 1/2 lb. of the ground beef. Delish, a very good recipe to build on!

Cake Mix Cookies VIII

These were very tasty. I used some of the other tips and added 2 T of oil and 1 t of vanilla to the mixture. I made one batch with devil's food cake mix and dark chocolate chips (a HUGE hit at the holiday party I took them to), and another batch made with red velvet cake mix with white chocolate chips, which were also delicious. Good, easy to follow recipe with great results.

Incredibly Cheesy Turkey Meatloaf

A very good turkey meatloaf recipe. I subsituted instant potato flakes for the breadcrumbs because I didn't have any on hand, and I omitted the ketchup. I put a thin layer of BBQ sauce on top before baking and it came out great! We loved it.

Very, very delicious. My boyfriend loved them. The only thing I would do differently is add the splash of milk that others suggested, and double the filling. I can't wait to make again!

If there were more stars, I'd give them. This was fabulous. We only used 4 jalapenos, thinking 8 would be too many, but the recipe is right. So yummy! And even more delicious the next day!

Easy Caramelized Onion Pork Chops

I made these just like the recipe said, except I added the onions ( two instead of one, and I may add another next time- I did use small onions, so that may have been why) to the pan first and then added the chops, browned them and then added the water. Also, it did take about 1 hour for the liquid to cook down, but it really made the chops TENDER! I made a side of rice and served the onion mixture on top of it with another side of roated red potatoes. Very tasty without a lot of work!!

Philly Cheesesteak Sandwich with Garlic Mayo

This was a really great recipe, especially the garlic mayo, and it was so easy to make! We used red peppers also. Next time, I may use sirloin as the meat was a tiny bit tough, and I will also add mushrooms. You also may want to have them slice the meat for you at the grocery, since it is hard to cut that thin with a knife. But overall, it was an excellent recipe!!

Cha Cha's White Chicken Chili

I made this tonight for dinner and it was AWESOME! I ommitted the green chiles because I didn't have them, but it was still great! Served it with a handful more of the cheese on top. Great recipe, Cathy!
