Blackened Green Beans

My husband's very Southern Grandmother made the best green beans I ever tasted, but I never learned how she made them. This is it! I used 4 pounds of frozen beans (couldn't find fresh), all the bacon, and twice the onion. I was short on time, so I didn't brown the bacon and onions and cooked it for about 3 hours. It was wonderful--will probably be even better next time I make it exactly as written. My three men, who usually only tolerate green beans, loved this. Thank you, tinyant1!

Broccoli with Garlic Butter and Cashews

I have one dyed-in-the-wool broccoli hater in my house, and I didn't have cashews. I made the sauce according to the recipe, except with a little less pepper, and my lazy self just tossed frozen green beans and pecans right in the sauce until heated through. Delicious! The sauce will be very versatile with meats and other veggies, too.

Lemon Blueberry Bread

I started to make this, THEN discovered I had no lemons or juice, blueberries, I used lowfat spread, strawberries, lemon extract, and substituted some of the juice of the strawberries for some of the milk. AND I didn't glaze it. We all loved it, anyway! :o) Great recipe--even stood up to my abuse! I'm anxious to try it as written now.

Baked Garlic Parmesan Chicken

This recipe has become a staple--my family loves it. I'm a little lazy, so I just toss the chicken with a little oil and seasonings and eyeball the breadcrumbs and parmesan, and bake it on parchment instead of greasing the pan. I also experiment with different seasonings, but I stay fairly true to the original recipe, and this chicken is fantastic--moist and delicious. Thanks for a great recipe, Karen!
