Spinach Mushroom Quiche

Was a big hit with my fiance. He is the pickiest eater and he loved this. I used artichoke hearts in place of mushrooms. mmmm!

Honey Mustard Tofu

Awesome and Easy Creamy Corn Casserole

Dessert like. Needs more cooking time..would take up to an hour+. I topped it off with a little honey. Tasty and filling!

Pan-Fried Asparagus

I have never liked asparagus before this recipe. I went to make it for my boyfriend b/c he likes it. I tasted a little and liked it alot. It had much more flaver with the garlic. Didn't have olive oil and just used veggie oil turned out fine. mmmm I would make again!

Honey Roasted Red Potatoes

Tasted Great! Would double the sauce. I didn't have dry mustard so I used some honey-dijon. The only downfall is it took so long to cook. At least an hour and 10 mins. I would cut up in smaller pieces next time.

Absolutely Fabulous Greek/House Dressing

Almost Eggless Egg Salad

Interesting! Easy to make. I think I'll try marinating the tofu in apple cider vinegar or some vinegrette before hand. I also added onion powder, garlic powder and I used a spicy dijon mustard. Let sit overnight to blend spices.

Cranberry Orange Loaf

This bread was tasty. I used a 16oz can of whole cranberries instead of fresh. Mine needed more cooking time 1 hour and about 15-20 mins. Good in the morning with coffee. I would definitely make again. Very simple.

Black Bean and Salsa Soup

YUM! The best soup i've had in a long time. Didn't have two cans of beans so I used one can and one can of corn. I mashed 1/2 of the beans. I took one reveiwer's advice and topped with cheese and added the sour cream. Topped that with chives. A keeper.

Easy Broccoli Quiche

Easy to make... It was good. Found it was more for a breakfast or brunch than a dinner. Would add more garlic or onions for more flavor. It took more time to cook then it says on the recipe.

Strawberry Spinach Salad I

This was very unusual but VERY tasty. I found a new "regular" for my recipes. I think I needed more strawberries. I also didn't have almonds on hand so I used pine nuts. I made it for my fiance and I and we didn't eat it all. Leftovers were not appealing so be sure to make enough for that day or don't put dressing on all of it. Good dish to pass.

Black Bean and Corn Salad II

This recipe was tasty. I liked it best the same day I made it. I like the suggestion as using it as a salsa, either way it was good. I left out Cayenne Pepper and just used black. Very quick prep.

Yellow Squash Casserole

Very Tasty! My picky fiance whom "hates" squash, loved this. I used onion flavored butter crackers. At the suggestion of other reviewers, I used half zucchini and I added a little garlic . Will make again.

Asian Coconut Rice

Great if you don't like bland rice. The dish was sweet. I took another reviewers advice and added 2 Tablespoons of sugar. I also tried with lite coconut milk; I would use the regular coconut milk b/c it added more flavor. Good with tofu and veggies!

Vegetable Biryani

This was my first attempt at making an Indian dish. I agree that the smells were wonderful! I followed the recipe all the way the end. I tasted it after the 20-25 minutes and it was hot/spicy but was missing something. I added about 2-3 Tablespoons of honey to balance the other flavors. It was great! Will try with fresh veggies next time.

Extra Easy Hummus

Since I moved to Tokyo, I haven't found any Tahini(so i'm glad I found this recipe). After I blended all ingredients, I wasn't sure if this would be good. I let it sit in the fridge overnight and it turned out to be delicious! Thank you.
