Tofu Creamed Spinach

The concept of this dish was interesting. I found it a little bit bland. I added some tamari on top at the end. Maybe I need to play with this recipe a bit more.

Mediterranean Chickpea Salad II

I followed the recipe exactly and the taste was great. I was surprised that it didn't need salt (something I am trying to cut out). Next time, I would replace the green pepper with red pepper, and add cucumber as suggested by others. I would make this again. Tasty.

Kalamata Olive Tapenade

I didn't have kalamata olives so I used a tin of green olives that I had on hand. It turned out to be really tasty. My husband ate it all in one sitting.

Thai-Style Peanut Sauce with Honey

This was a great recipe. I replaced the ginger root with some thai sweet chili sauce. Also, instead of chunky peanut butter (which was optional), I added crushed peanuts. At the suggestion of others, I added some chopped basil. I served this with rice noodles, tofu, and veggies. This is definitely a keeper!

Artichoke and Chickpea Stew

This has a wonderful flavor. I doubled the lemon juice as suggested. I also left out the red pepper flakes. I didn't have sage so I substituted it with rosemary. This is not thick, like a stew but is still hearty. It reminded me of a Thanksgiving dish.

Guacamole

Despite all the rave reviews, I didn't think this was very good. I've tried a few kinds in my day, so it comes down to personal taste. Perhaps I would leave out the onions (I usually love onions) and add more garlic. Or use green onions. Also, blend avocados, garlic, and other spices in the food processor. Stiring in the tomatoes by hand. Maybe even add some sour cream.

Marrakesh Vegetable Curry

I didn't have a dutch oven so I ended up cooking the veggies on low, in a frying pan, until tender. I then added the spices and OJ and simmered for 15 minutes. I didn't have zucchini so I substituted it with asparagus and fresh peas. I thought it was really healthy with the right amount of sweet and spice.

Asparagus Cashew Rice Pilaf

This was very flavorful! I did increase the garlic a bit and I sauted the asparagus in olive oil instead of boiling. I wasn't sure how much to break the pasta so I just broke it in half. Next time I'd break it down a little further. I may try again and add mushrooms as well.

Tofu Parmigiana

After reading all the reviews, I wasn't sure about this one...I used milk, instead of water to soak the tofu in. The bread crumbs did have some trouble sticking BUT this was delicious!

Insanely Easy Vegetarian Chili

This was incredibly easy (as stated in the title). The only change I would make is to add far less chili powder out of personal preference. I topped with sour cream and cheddar cheese. Great for the cold weather!
