Blueberry Zucchini Bread

Reviewed: Sep. 1, 2009
Wonderful, moist muffins - makes 12 in paper liners. Cut back on sugar, used 1/2 cup applesauce and 1/2 cup oil, added a little more cinnamon and baking powder. Toppings suggested add to the muffins.

Herb Roasted Pork

Reviewed: Aug. 14, 2009
This was fantastic. Per reviews, I doubled herbs and rubbed over a 4.4 lb. tenderloin. Then I browned it, cut it in two crosswise, and put it in the fridge overnight. I woke up at 5 a.m. so put it into my slow cooker on low. I also doubled the sauce but it was not necessary. By noon, it was cooked to perfection and sliced nicely. I filled a pitcher and served the sauce as au jus. Company raved about it. Thank you so much for sharing this wonderful recipe with us.

Sarah's Applesauce

Reviewed: Oct. 25, 2008
Very easy, tasty recipe. I prepared my apples in the evening, put them in a slow cooker and let them cook overnight. Mashed them the next a.m. with a potato masher and they were ready to go. Rather than regular cinnamon, I went to a spice store and purchased Chinese Cinnamon - top seller item and it notches up the flavor. Will be keeping this recipe.

Baked Pork Chops I

Reviewed: Oct. 25, 2008
Thought this had great flavor! My husband loved it. I cut two slices off the end of a tenderloin, sprinkled with suggested seasonings to taste and followed directions. As suggested, I heated up the soup with 3/4 cup of milk, omitting the wine. By the time it finished cooking, the gravy was perfect for two. Served over noodles with a side dish of green beans.

Cousin Cosmo's Greek Chicken

Reviewed: Jul. 28, 2008
Very colorful and attractive meal. My company was impressed. I added some garlic to stuffing mixture, used 1 can of chicken broth for chicken to cook in, added garlic, about 3 cups of spinach and grape tomatoes cut in half. Served over couscous which we found a little "grainy." Will try rice pilaf next time. Definitely a keeper.

Slow Cooker Beef Stew I

Reviewed: Feb. 23, 2008
This is excellent. Sometimes I'll prepare everything on Saturday using some of the suggestions, and refrigerate. Early Sunday a.m. I plug it in; later I take it to the church kitchen, plug it in again. At noon we take it to shut-ins for lunch. They enjoy it so much!

Grandma's Lemon Meringue Pie

Reviewed: Jan. 25, 2008
This is very good - I used 1/2 sugar and 1/2 powdered sugar for the meringue and it cut down on the weeping. One suggestion for new cooks - zest (grate) your lemons before cutting them and squeezing out the juice. Too hard to hang on to otherwise.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Jan. 10, 2008
This was so refreshing! Thank you! As others suggested I substituted with Feta cheese, pecans and two apples, eliminating the pear. I also think using fresh lemons (4 large for serving 16) gives a very light flavor. Since I was taking it to a church potluck, I cut up my apples the night before, putting them in a canning jar with water and Fruit Fresh. Had lovely white apple pieces to mix up at last minute. Addition: made this again with Jonathon apples and they turned to much overnight. Use a firm, crisp apple! Believe I used Gala or Fuji first time.

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Oct. 2, 2007
Did as others suggested - dbld recipe, rubbed butter into dry ingredients with fingers, sprayed my 9x13 pan, patted in bottom layer firmly, put raspberry jam on top with a half cup of chocolate chips mixed in, patted top layer down lightly. Came out of pan easily, no dry parts and tasted delicious! Thank you for great recipe!

Best Lemonade Ever

Reviewed: Aug. 13, 2007
Re my August 13 review. I actually used 12 lemons rather than 10 . . . but they must have been whoppers because I made up another batch today and it took all 8 lemons to make the recipe. After softening the lemons, I made a slit and then squeezed out most of the juice. Otherwise I found much of the juice ended up on my cutting board. This really is yummy lemonade.

Pineapple Chicken Tenders

Reviewed: Jul. 5, 2007
This was good. Did chicken tenders in GF Grill which speeded things up. I also sauted some onion and green pepper, added some pineapple and served it over rice. I doubled sauce and thickened with cornstarch. I think some cashews would be a good addition.
