Burrito Pie

Reviewed: Feb. 17, 2011
Yummy!!! I didn't even bother to read the reviews and make changes. I think that my can of chilis was bigger, and I used enchilada sauce instead of taco sauce. Standard can sizes of the other stuff. I used about 1 lb of cheese total. This turned out very tasty; I may read the reviews and get additional change ideas, or I might just keep making it this way because we thought it was great!

Slow Cooker Posole with Pork and Chicken

Reviewed: Jan. 19, 2011
I'm such an idiot. I put in a one can of chipotle peppers in adobo sauce. The recipe calles for ONE PEPPER. Don't screw that up. My mouth is on fire from taking a taste of this. The whole pot is ruined :(

Spicy Slow Cooker Mac-n-Cheese

Reviewed: Jan. 19, 2011
Made exactly as directed. The noodles became total mush long before the allotted time. I didn't care for the sausage and since it was not in for very long, its flavor did not permeate the dish, and the sausage itself didn't get nice and soft like other sausage slow cooker recipes that I make. Add to that the cost of this recipe after you hunt down andouille sausage (6.99 for the package, the ONLY type at my grocery store) and I was looking at $15 for a pretty generic meal. It seems like this would be made just as easily making the sauce on the stove and preparing the noodles separately to give them the best consistency. On the positives - I thought that the sauce was really great. It's nice and creamy and quite tasty. I know it seems blasphemous to not use real cream or milk in mac and cheese but I always find that dishes made with cream sauce never reheat very nicely. If I make this again I will forget the sausage and go straight for mac-n-cheese, and only if I can get the entire dish for under $5

Grandmother's Pound Cake II

Reviewed: Dec. 8, 2010
HOLY MOLY. This is my first time making pound cake. I'm not exaggerating, I think this may be the most delicious cake that I have ever eaten in my life. I made just one loaf and added 1/2tsp vanilla. WOW. Amazing. Only weird thing was I took it out after 50min and it was even a bit overdone!

A very good recipe, although nothing to bring down the house. Nice and hearty with rice. I'll definitely make it again as it's a great recipe for a double batch in the crock pot.

Pork Chops in Red Sauce

Reviewed: Jul. 12, 2010
This is a very simple and VERY tasty method for making pork chops. However the sauce is far too runny if you add the water as stated in the recipe. Even without the water I usually have to pour the sauce into a saucepan after the chops are done and add in some corn starch to thicken it into a gravy. We love this super easy recipe though - the chops are nice and juicy, the onions are delish, and the gravy somehow doesn't taste like tomato soup anymore.

Dutch Babies II

I can't believe I haven't rated this yet. I make these for dinner when I'm too lazy to do anything special. It fools hubby every time because he thinks this is a super special meal! This recipe is absolutely perfect and ridiculously easy. We like ours nice and thin so I do them in an 8x11 pan.

Radish Top Soup

Reviewed: Jun. 19, 2010
I'm not sure why I was surprised, considering how highly rated this is, but this soup was absolutely wonderful! Hubby and I both loved it. I didn't have heavy cream and wanted it to be nice and creamy, so I used plain full-fat yogurt. Also added some salt and pepper (particularly since I was using salt-free homemade chicken stock). What an awesome use for radish tops!!!

Strawberry Romaine Salad I

Reviewed: Mar. 21, 2010
I added a lot of stuff to this recipe - sliced grilled chicken, candied walnuts and feta cheese. However the spirit of the recipe remains and the dressing is just fabulous - super light and zesty (although 1 tbsp of poppy seeds is sufficient). Absolutely mouth watering!

Slow Cooker Lasagna

Reviewed: Feb. 10, 2010
This was a very tasty and simple to make recipe. I really appreciated that I didn't have to pre-cook the lasagna noodles. It was super fast to throw together and came out reasonably well. This will definitely be a repeat. Edited: 6 hours is TOO LONG for this recipe. Both times I have made it, the edges get burnt and gross. This last time, somehow after 6 hours it became entirely inedible :( Stick to 4 hours.

Slow Cooker Texas Pulled Pork

Reviewed: Dec. 23, 2009
HOLY COW! I put this roast in the slow cooker for a full 24 hours, on Low the entire time. I turned at 4 hours and again at 12 (although at 12, it just fell apart and continued to do so throughout the day). At the end of the 24 hours, the meat was dark brown from soaking up sauce and the most incredibly rich, moist, tangy and delicious BBQ that I have ever had in my entire life. It was so juicy and delicious that we didn't even need any extra sauce or additions. I can't believe how amazing this was. Would HIGHLY recommend cooking for a full 24 hours on low if you can plan it that way. Great with beef roast, too!

Butternut Squash Soup

Delicious! This soup has such a wonderful mild flavor, and it's so rich and creamy. I made mine using about 12 oz of cream cheese rather than 16 oz, and it was just perfect. My husband already wants to know when I am going to make it again. Spectacular!

Chai Tea Mix

Reviewed: Nov. 25, 2009
Spectacular! Hubby and I have really missed the delicious chai at our favorite Indian restaurant since we moved out of state. While this chai isn't perfect, it's pretty darn close. I love the smell/taste of the cardamom and feel it is an essential ingredient. I priced out this recipe very explicitly using my kitchen scale and exact cost of ingredients. The ingredients minus spices were $3.96. Allowing $1-2 for the spices, the maximum price of this recipe was $6 (a previous review stating $17 was either highly exaggerated, or the reviewer was paying a whole lot for ingredients).

Pumpkin Bread IV

Reviewed: Nov. 3, 2009
Sinfully amazing. I make these into muffins and this recipe makes three dozen. Just use the whole can of pumpkin as it's just over 3 cups. I've been toying with ways to make it healthier, but after ruining the recipe once with too many substitutions, currently my only change is to use 1 cup applesauce and 1/2 cup oil instead of 1-1/2 cups oil and 1-3/4 cups whole wheat flour in place of the same amount white flour. Honestly it is perfect with no changes, I am just doing what I can to make it slightly less sinful!

Sweet Dinner Rolls

Reviewed: Nov. 3, 2009
These never fail to make absolutely delicious dinner rolls that receive many compliments. I do the proofing/dough process by hand and let the dough rise for 1 hour in each rise cycle. I use whole wheat flour for 1-3/4 cups of the flour amount. I have tried the rolls both by rolling the dough out flat and rolling up, and simply dividing the dough into pieces and allowing to rise. The rolls are far superior (extra light and flaky) with the extra few minutes to roll the dough flat. I make 16 rolls - divide the dough into four pieces, rolling out each piece into a rectangle and rolling up then cutting into four pieces.
