Two Ingredient Pumpkin Cake
I read reviews for this and saw that the batter was thick and didn't rise. So I combined this idea with others I have read about "Diet Coke cake" and added 1/2 or so can of Caffeine Free Diet Coke to the batter to make it thinner and fluffy. The cake rose nicely and is very light and airy without adding any extra calories via eggs. Worked like a charm!

Tuscan Sausage Ragu
Oh man. This recipe is awesome. I did my best to make it EXACTLY as stated, but we don't have red wine, so I used a bit of water for that part. I let this sit in the crock pot all day and it was AMAZING. I only made it last week and I want to have it again. I'm not sure what about it was so special - I'm guessing the sausage as I've never used it in a pasta sauce. Just mouth watering. Edit: Just realized I lied on accident, I used 2% milk rather than heavy cream and it was still amazing.

Slow Cooker Posole with Pork and Chicken
I'm such an idiot. I put in a one can of chipotle peppers in adobo sauce. The recipe calles for ONE PEPPER. Don't screw that up. My mouth is on fire from taking a taste of this. The whole pot is ruined :(
