Rich Chocolate Frosting

Like this frosting a lot! My family doesn't really like desserts that are way too sweet so instead of 9 cups of confectioner sugar I only put 5 cups. It was still sweet but not too sweet. I would probably try 4 cups next time I make it. Thank you.

Dark Chocolate Cake I

It's so yummy!!! I used coffee (French Toast Flavor) instead of boiling water. I gave it a 4 star instead of 5 because it is a little crumby....but still soooo good.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I made this twice now and both time was a hit in my family and friends gathering. The first time I made it I drained the crushed pineapple and it turned out good. But the second time I made it I actually forgot to drain them and it turned out a lot better. More moist. For the frosting, I only used 2 cups confectioner sugar instead of 4 cups and it still turned out good. I think putting all 4 cups will be way too sweet. I also agree with some of the reviewers, the frosting is way too much for a dozen cupcakes. I was able to use it for 25 to 30 cupcakes.

Slow Cooker Lime Chicken with Rice

Love this! Only thing I didn't do is add rice. We don't like soggy rice so I just cooked the rice separately in a rice cooker. I also rub the chicken with a little bit of garlic salt before putting it in a slow cooker. My In-Laws loved it!....especially my husband!

Fresh Strawberry Upside Down Cake

We love this cake! I made this for my husbands picky eater cousin's birthday. We couldn't stop eating it. Everyone loved it!!! Even my husband who doesn't like to eat sweets. He said this is the best cake I've ever made =) I read the other reviews and followed a few of their suggestions. I only used 3 oz. package of the strawberry gelatin mix. After I crushed the fresh strawberries with a fork, I put it in a bowl, added a tablespoon of sugar and all of the 3 oz. gelatin mix. I let it sit while I made the cake mix. I used buttercake and it was delish! I also used parchment paper so I didn't have a problem transferring it on a serving tray.
