Peanut Butter Apple Dip

I used reduced fat natural peanut butter, kept the sugar the same (since there's none in the pb) and added a dash of vanilla in with the milk. So good!

I was looking for a way to help use up the 25lbs of hazelnuts I bought in my attempt to find the perfect homemade Nutella recipe... I doubled the recipe, which I recommend (the work wouldn't justify a single batch.) The cookies were really good warm. Once they cooled, they got much harder and, if I were a coffee drinker, they would be good with a cuppa. I needed milk to wash them down, but I'll definitely make them again.

Roasted Beets 'n' Sweets

I will start by saying that I've never liked beets. They taste like dirt to me. But they came in today's CSA box and I wasn't about to compost them. That being said, this was the least-bad they've ever tasted to me. The sweet potatoes and onions, however, were delicious. So, 5 stars (didn't think it was fair to dock points due to my prejudice against the beets, next time I'll use carrots or white potatoes...)

Iced Pumpkin Cookies

These were SO good! I made the recipe almost as written (subbed 1/2 c brown sugar for white and added cinnamon to the glaze). Next time I'll sub applesauce for some of the butter and use some whole wheat pastry flour for some of the white... and double the batch, since these will disappear immediately!

Pumpkin Wheat Honey Muffins

I meant to make these with the 1c of pumpkin suggested by the other reviewers and totally forgot... as a result they WERE kind of bland. Next time I'll increase the pumpkin and spices. I subbed half the oil with applesauce, used white whole wheat flour, and craisins instead of raisins and the texture was great. Definitely a recipe I'll be tweaking and keeping.

Whole Wheat Sweet Potato Muffins

These are amazing and so moist... no one would ever guess they are super healthy, too. Even my 6 year old said they would be 'awesome' in her snack or lunch. Definitely a keeper recipe. For the topping, I just used oat flour and mixed with the other ingredients (I chopped slivered almonds) and that saved dirtying the food processor.

Whole-Wheat Chocolate Chip Cookies

These are great cookies. I used 1/2 c margarine ad 1/4 c applesauce... great taste and texture. Probably my new go-to choc chip cookie recipe because they are a tad healthier than white-flour only recipes.

Fabulous Homemade Bread

Amazing bread. I used honey instead of brown sugar and my family of 4 gobbled down the whole batch in 2 days. I only got 3 loaves out of it, not 6, but this will be my go-to recipe from now on.

Refried Beans Without the Refry

Fabulous! I left out the jalapeno because my preschoolers don't like spicy, but there are great. And SO much cheaper to make than store-bought. With a 25lb bag of pintos in my pantry, I'll be making these whenever we have a Mexican dinner.

Boston Baked Beans

This is my go-to bean recipe and I've made it countless times exactly as written. Tastes just like my grandmother's used to. Tonight I made them using pinto beans (I have a 25 lb bag to use up) and I actually liked them even better, if that was possible! I have found that if I cook them entirely in the crock-pot there is no need to soak them overnight.

Peppermint Patty Brownies

I love these. Of course they are better from scratch, but I ALWAYS have brownie mixes and a bag of yorks (I buy the regular size for cheap after Christmas) on hand. Prepare 2 boxes of mix as directed, then follow this recipe from step 3... great for those last-minute occasions when you need something yummy quick.
