Bruschetta 'n Cheese Stuffed-Chicken Breasts

Reviewed: Jan. 1, 2014
This turned out great, I gave it 4 stars because I had to make changes. I used petite diced tomatos with garlic, oregano, & basil. I used stoufers stuffing mix. I put the tomatoes in my mini prep and blended them with a 1/2 tsp garlic. I mixed the blended tomatos/garlic, stuffing mix, cheese, and a little parm as my mixture to put into the chicken. I didn't have the salad dressing called for so I used the remainder of the canned tomatos, 1/4 cup of parm, 1/4 cup ranch and blended again in the mini prep and coated the chicken rolls. The last 10 minutes I added additional motz cheese and melted. next time though I will pound the chicken closer to the 1/4 inch as this time I only got it to 1/2 inch thick. It was wonderful, everyone liked it.

Bread Pudding in the Slow Cooker

Reviewed: Sep. 5, 2013
WOW! This turned out great! I used a 4 Qt. crockpot and increased the servings to 8. I did toast my bread(a whole loaf of Pep. farm naturals honey oat). I added about 1/4 cup of brown sugar and 2 Tbsp. of real maple syrup. I also switched the nutmeg to cinnamon, just because of personal preferance. I also served additional maple syrup on the side. I didn't need it as I felt is was sweet enough, but others added a bit. I can't wait to make this again, and again, and again!!! Next time I will spray the sides of the crockpot with cooking spray, especially if I plan to keep it on warm for any period of time. Thanks for this awesome, and super easy recipe!!!

Banana Oatmeal Bread

Reviewed: Jun. 4, 2012
So good! I made them into muffins because I didn't want to wait an hour to cook. I made 24 from the amount in the recipe, filled about 1/2 way. I baked them at 350 x 19 minutes. I did sub the shortening for 1/2 cup applesauce and 1/2 cup vegetable oil. I also added about 1/4 - 1/2 cup more flour. I used 3 mashed bananas. They tasted great, good texture, and they were very moist. I had been looking for a recipe to use overripe bananas and this is perfect!

Best Ever Sausage with Peppers, Onions, and Beer!

Reviewed: May 18, 2011
WOW! This was soooo good! I used the recommendation for the crock pot version. I cut the recipe in 1/2 and used a medium crock pot. I did end up using a whole 6 oz can of paste though to thicken it a little more. Also, to make it healthier I used low fat mild italian chicken sausage. I also used a light beer to lessen the beer taste. Did not use cilantro, used dried oregano and parsley. Next time I will wait to salt it and maybe use a low sodium paste though. The first night we had it on whole grain pasta, the second night as a sandwich. It was AWESOME!!

Definately a great option for a holiday spread, my husband would have given it 10 stars! We ended up putting it in the small filo cups as an appetizer, it worked perfectly!

Summerly Squash

Reviewed: Sep. 1, 2010
Love this squash recipe! I did make adjustments based on what I had and preferences. I used a can of seasoned tomatoes, drained, plus minced garlic, and oregano. I didn't use as much onions as the recipe called for, and I used frozen ones as I am not a fan of onion. This turned out great, I have made it a couple of times this summer and even those that don't like squash went back for seconds.

Cowboy Hash

Reviewed: Jun. 10, 2010
This was a pretty good recipe, but it needed a little added to it to make it better. I sauted the beef with some garlic and onion. I added 1 can of tomato paste to give it a base and then seasoned it with adobo seasoning, more garlic(can never have too much right!), and chili powder. Then I added cheddar cheese on top.

Cheesy Creamed Spinach

Reviewed: Dec. 2, 2009
OMG!!! This was amazing! I used this as a new recipe for Thanksgiving and it was a huge success. I used 4 packages of frozen spinach and drained them very well insted of fresh. I could not make myself buy heavy cream, so I used light cream insted which worked fine. Also, I used the Kraft 5 italian cheese mixture insted of just provolone which has provolone, asiago, parm, romano, and motz in it. Lastly I made this the day before and put it in a casserole dish and used a ritz cracker and butter topping on it to make it more of a casserole which worked very well - I baked it at 350 for 20-30 minuntes - basically till I saw it start bubbling. So not exactly the same, but all of the other ingredients were. Everyone loved it...even the spinach haters.

Apple Crisp II

Reviewed: Oct. 22, 2006
This turned out great! Moist, tasty, not too sweet, perfect flavor. I am definately making this one again!! Also...I have doubled the crisp portion and used a smaller pan. Also, insted of the "drizzle" I just mix the apples with the sugar, vanilla, and a bit more cinnamon to make it a little easier.
