Italian Chicken Skillet

I made this last night and LOVED it. I used chicken Italian sausage instead of chicken, added mushrooms, 2 stems (leaves only) of fresh thyme, and basil. I was looking for something that would make good lunch leftovers, and this did not disappoint!

Best Big, Fat, Chewy Chocolate Chip Cookie

I'm sure these cookies would have tasted great. However, I made these exactly per the recipe instructions without checking the postings. So I didn't know I was supposed to refrigerate the dough before I baked them. When I went to check on my cookies 15 minutes into baking, it was one big cookie blob. Maybe if I was making a cookie CAKE it would have been OK. If this recipe had stated "refrigerate the dough at least one hour before baking", then I would probably rate it much higher.

Wine and Dijon Marinated Pork Loin

Way too salty. Unfortunately I didn't see the reviewer's suggestion to cut the salt until AFTER I had made this. I may try it again, just without the salt next time.

Basil Chicken over Angel Hair

I have made this a LOT for my family, plus it's been a huge hit with friends. Variances: I use 2 cans tomatos instead of real tomatos, tube of basil instead of real basil, and I include mushrooms and black olives. Delicious!!

Quick and Easy Green Chile Chicken Enchilada Casserole

We absolutely loved this recipe - will definitely make it again, and the leftovers were good too. Some mods: as previously suggested, I didn't char the tortillas, I soaked them in the sauce instead of pouring sauce, I only used 20oz of the sauce, and I added a can of black beans (first layer) and mixed black olives in with the chicken and sour cream.

Brown Rice and Black Bean Casserole

I love this recipe so much, I make it at least once a week and take the leftovers for lunch. Even my 3-yr-old son likes it, and he doesn't like healthy stuff. The only suggestion I have is use Cheddar and/or Parmesan cheese instead of Swiss. I also added black olives and frozen peas.
