Cake Mixes from Scratch and Variations

Reviewed: Oct. 21, 2007
I have followed the tweaks suggested earlier: swap oil for shortening, increase milk to 1 1/2c. I have also added a box of pudding mix to mine and it made for a very moist cake. In one version I made pistachio using pistachio pudding and subs almond extract for vanilla. Also, I have made a divine lemon cake with this recipe by subs. lemon extract for vanilla and adding vanilla pudding. It is a delicious cake, much better than boxed mixes. The texture reminds me of my delicious wedding cake. MMMMMMMMM!! Thanks for this wonderful recipe! I recieve compliments whenever I make it!!

Easy Microwave Chocolate Cake

Reviewed: Sep. 21, 2007
Flavor-wise, this is a 3 1/2... convenience-wise, this is a 6. I took the advice of others and added just under 1/2 c. extra sugar. I think I'll add a little less next time, however, maybe enough to total 1/2 cup. I added 1/3 c. chocolate chips but will decrease to 1/4 cup. Although the addition makes it taste good, it makes it rather sludgy. I agree with another reviewer that the cake itself was not chocolaty enough. I will be doubling the coca powder next time... and there will be a next time. I think I shall make this once a month to cure my chocolate craving!

Pizza Dough I

Reviewed: May 26, 2007
I think people are missing the point of this dough. This dough is meant to be EASY so that you can make it last minute. Adding the extra steps completely ruins the ease of this recipe. It is delicious, AS IS. If you want to tweek it to add flavor add some herbs to the dough. Of course the dough could be better with more time and more steps (and it is, I've taken the time). But the recipe, as is, deserves the full 5 stars. You will never make pizza dough better than this with this little effort put forth. Thanks for the FABULOUS recipe. We will never order out again.

Grecian Pork Tenderloin

Reviewed: Jan. 17, 2007
This is FABULOUS!! I marinate it over night and sometimes add 1/4 c of honey. The marinade makes a GREAT salad dressing when sweetened with honey and compliments the meal perfectly. Everybody RAVES over this one! It is perfect for summer nights.

My Best Clam Chowder

Reviewed: Jan. 17, 2007
The presence of the flour is overwhelming in this recipe (for my taste). It is INCREDIBLY thick... and rather bland. To make it a little less so, I added plenty of extra vinegar and some cholula sauce. It helped a lot but, sadly, we ended up dumping most of it. (Maybe it's just my westcoast tastebuds...)

Marcia's Famous Sticky Buns

Reviewed: Sep. 28, 2005
This is a great recipe. They are simple and delicious. In the winter I tend to keep my house warm so I place it by a window (barely cracked open) during the night. This is what I make Christmas morning. It's a special sweet treat for the kids and I don't have to slave away in the kitchen... plenty of time for that later!

Red Pepper Soup

Reviewed: Jul. 25, 2004
This is a great recipe! All of my neighbors asked for it. The 2nd time I made it I pureed it in my food processor and forgot I had it running. It ended up pureeing for about 10 minutes. It required very little straining due to this and, too my surprise, was very smooth. It was beneficial because the first time I didn't feel that it made enough but with the extra pureeing it made just that much more.

White Chocolate Raspberry Cheesecake

Reviewed: Feb. 25, 2003
This is an incredible cheesecake. It's much easier to make than you'd think and tastes GREAT. My husband can't get enough of it and a friend who DOES NOT like cheesecake ASKED for the recipe. I used chocolate graham crackers for the crust and it turned out great. I made extra raspberry sauce which i used to garnish the plate along with fresh raspberries and white choclate shavings. Also, the 2nd time I made this cake, I only had half the amount of half and half and needed substituted the remainder with whole milk. The result was still delicious though the texture much stickier. This is a very romantic dessert... perfect for an anniversary or Valentine's day!
