Cream of Pumpkin Soup

I finally got around to making this soup and totally regret not making it sooner! What an amazing fall soup to add to my collection! Of course, I followed the suggestions of others and added a pinch more of spice here and there and even added nutmeg and the glob of brown sugar everyone suggested. I cut back to 1/2 cup of onion (I always cut back my onions). It was awesome! I must say, if you enjoy pumpkin then I really don't see why you wouldn't completely love this recipe!

Easy Pasta Fagioli

I tried this for the first time tonight and it was a hit! Like I always do, I took into consideration some of the suggestions of others and I added a hair more broth and only 1 can of tomato sauce to get that thinner consistancy. Added 4 garlic cloves for flavor and followed everything else exactly. Served it with Ceasar Salad. Awesome! I plan on making this some weekend with friends for soup, salad and I will add some bread and wine! Excellant healthy meal! :) Thanks for Sharing! UPDATE: I added mushrooms and used mini shells...still delish!

Guaco-Tacos

These were a good alternative to regular meat or chicken tacos. Added a bunch of extra flavors such as garlic, garlic powder, cumin and lime juice that others had suggested....Mixed the beans, salsa and guac all together when we were done and made it into a pretty good dip that we ate off of for a few days after with taco chips!

White Chili I

I was a little nervous making this because there were sooo many variations people suggested! But isn't it the greatest feeling when you try a new recipe and it turns out to be something you love! I stuck pretty close to the original recipe because of all the different variations I became overwhelmed...I used one less chicken breast and added a can of beans. Let one can cook a little longer so it did become a little more mushier because people were saying the consistancy wasnt quite "chili like". Spared the one onion chopped as well and a dash more of all the spices like everyone else said to do. It turned out great....good flavor and consistancy! This is getting added to the box! Thanks! :-)

Awesome Pasta Salad

SO YUMMY! So versatile too! I looked up a few recipes to help keep my cholesterol under control and this was one of the options....I made this for the first time today and LOVED it....I left out the salami and added 1/2 block of Pepper Jack cheese and added a few suggestions from others and added Parm and shredded Mozz cheese and it turned out great! I also used green olives. Thanks so much for sharing this recipe....its the perfect base to a great pasta salad!!

To Die For Fettuccine Alfredo

I made this recipe tonight for the first time, replacing my old fettuccine recipe and I was so excited! I followed the recipe exactly except I added some cooked chicken to the whole dish at the end and it was amazing! My husband was a fan as well. He asked if this dish was different and when I said yes he said "it's way better". Haha mind you I used to use the jar stuff (the better brands too!) But anyway, it is rich like some of the other reviews had said but if you eat the appropriate amount and not a plate full, it's really a great dish! I plan on permanetly replacing my old recipe with this one! Thanks for sharing!

Pumpkin Dip

This was just a downright cool recipe. I accidently didn't put enough sugar in it the first time I made it and put the correct amount in the second time and it made a world of difference! I served it with ginger snaps and vanilla wafers as others had suggested. I have a VERY picky family and almost everyone had said they liked it. Even my husband who doesn't like pumpkin said it was good. I enjoyed it and thought it was a good idea for an appetizer. Will def. make again for a fall/winter get together!

Chicken Enchiladas I

I made these last night with a few of another reviewers revisons and I must say they weren't quite what I expected. They were definitely a good dish. I had used the taco cheese blend with a can of the green chilies and taco and enchilada sauce. I think the onion was a little overwhelming and I like a kick to my mexican food too! I just felt as if the recipe was lacking something that I couldn't quite put my finger on! I'll keep trying for another good enchilada recipe though!

Hot Spinach and Artichoke Dip

This is a classic version of a hot artichoke and spinach dip. It was exactly what I had hoped for. I will keep this on hand for any party or get together in the future! It makes a lot and I ended up not being able to finish it all, which bummed me out given how the ingredients are a hair pricey for a dip. I think it's worth it though!

Hot Spiced Cranberry Cider

I made this for Thanksgiving this year and everyone had something good to say about! I LOVE it, I make small batches just for myself whenever the mood strikes me! I will definitely be using this recipe for many many years to come. It's so simple and so good, those are the exact kind of recipes I like! Thank you for sharing!
