Cream of Pumpkin Soup
I finally got around to making this soup and totally regret not making it sooner! What an amazing fall soup to add to my collection! Of course, I followed the suggestions of others and added a pinch more of spice here and there and even added nutmeg and the glob of brown sugar everyone suggested. I cut back to 1/2 cup of onion (I always cut back my onions). It was awesome! I must say, if you enjoy pumpkin then I really don't see why you wouldn't completely love this recipe!

Easy Pasta Fagioli
I tried this for the first time tonight and it was a hit! Like I always do, I took into consideration some of the suggestions of others and I added a hair more broth and only 1 can of tomato sauce to get that thinner consistancy. Added 4 garlic cloves for flavor and followed everything else exactly. Served it with Ceasar Salad. Awesome! I plan on making this some weekend with friends for soup, salad and I will add some bread and wine! Excellant healthy meal! :) Thanks for Sharing! UPDATE: I added mushrooms and used mini shells...still delish!

These were a good alternative to regular meat or chicken tacos. Added a bunch of extra flavors such as garlic, garlic powder, cumin and lime juice that others had suggested....Mixed the beans, salsa and guac all together when we were done and made it into a pretty good dip that we ate off of for a few days after with taco chips!
