Downeast Maine Pumpkin Bread

Everyone loved this. I made them into cupcake portions (got about 3 dozen) & even did something with a cream cheese frosting. They were gobbled up in no time. I have put 1 dozen in the freezer to see how we'll they freeze. UPDATE: THIS FREEZES WELL!! We defrosted these and they tasted as good as fresh - good to know. Yummy!

Mrs. Sigg's Snickerdoodles

I may have tripled the amount of cinnamon /sugar mixture these were rolled in. One thing I find with snicker doodles: you can never roll them too much!! Next time I will make these a little smaller. Otherwise they were absolutely DELISH. Watch your time!! Timing is crucial to a good snicker doodle. These are my sisters favourite and she said they were the best she's ever had. Country Apple Dumplings

When I first read the ingredients I really wasn't sure about these but thought I'd give them a try. They were a hit! Must eat when warm. I will use half an apple in each next time as I prefer more apple (personal taste). I even made a glaze for these with icing sugar and a little milk. Also I found the longer they sat in the pan the soaked up more of the "syrup". YUMMY! Will be making this again for sure... Maybe as a sugar-free options as others have mentioned.

Very quick & easy to make AND Much better than the store bought - WOW! SOO YUMMY!!! I use this with pita bread and veggies !! I do add a little more garlic (personal preference).

Banana Sour Cream Bread

5+++++++!! My mom used to make banana bread for us as kids on a regular basis so I'm always reluctant to try other recipes since hers has always been my favourite - none of them can even compare with my mom's. I'd have to say that this recipe is better (sorry mom lol). This is going to be my new banana bread recipe!! I made then into square cupcakes for easy individual servings (made 1/2 the recipe & got about 18 "cupcakes"). I even added some chocolate chips to some. I made these last night and there are only 5 left this morning!!! ***DO NOT FORGET the dusting of cinnamon & sugar on the pan this adds such wonderful flavours!!!!! Although my husband and I are on an eating healthy mission so next time I'm going to try some of the other reviewers suggestions to make this lower fat. UPDATE: I made this with low fat sour cream and I noticed quite a difference. Will use regular next time. I also tried a "crumble" topping on one of the loaves (1/4 cup packed brown sugar, 1/4 cup flour, 2 Tbsp softened butter, 1/4 tsp salt. Mix all together until it's crumbly). This was good but I'm a huge lover of the sticky top of banana bread (sometimes I just eat the top and give my husband the rest) so for me I prefer this without - personal preference. Others said they prefer the crumble. This is the first time I made these in "regular size" loaves (not sure if that was the diff) and I noticed that the colour toward the top of the loaf was different than the bottom. Although still delicious.

World's Best Lasagna

Mmmmmmm! 5++++++++++++++++++++++!! My husband is Italian and his favourite food is lasagna....his GRANDMOTHER'S lasagna - needless to say, we had BIG shoes to fill. We filled them (or at least came extremely extremely EXTREMELY close)....He LOVED this. I think what really gave this the extra edge: 1. Let the sauce simmer for 6 hours 2. homemade pasta (mix 1 c flour + 1/2 tsp salt, make well in flour, add 1 egg + 1 Tbsp olive oil + 2 Tbsp water, knead 3-4 mins, let rest 15 mins, roll)!! A little more time but soooooooooo worth it. Yummy yummy!!! It's just the two of us so made several smaller portion and froze them. Can't wait till we can have moooorrreeeee!!!!

Broiled Tilapia Parmesan

Made this for my husband & I. We don't prepare fish often...although we're trying to introduce more into our weekly eating & I thought this would be a good place to start since it seemed very simple. I thought right! The even better is that they were delicious too. We have added this to our recipe box & will be making it again.

Roasted Sweet Potatoes & Onions

I love sweet potatoes but have never had them like tis before. The amaretto made this sound very interesting. Verdict: Yummy!! My husband dislikes sweet potatoes and he gobbled these up. If I were to be extremely picky, I will use a little less Amaretto next time (just a touch). Otherwise, these were absolutely delicious AND simple!!

Grandma Ople's Apple Pie

5+++++++ Pouring the "caramel" over the top but it was SOOOOOOOO worth it!!! This is THE best applets I have ever tasted. We went apple picking with some friends and decided to have an "Apple Pie Party". I made about 5 different apple pie recipes and this one was the winner by far!!! Everyone loved it and asked for the recipe. UPDATE: made this again in miniature version using muffin tin. They were soooo delicious. Mmmmmmmmm!!!! Thank you, thank you, thank you Grandma Ople!!

Slow Cooker Chicken Taco Soup

SUPER EASY & SUPER YUMMY! Decreased the chicken & kept everything exactly the same. Yummy!! Yummy!!! We like spice so we added some chilli powder. Everyone had seconds...& thirds! I even used the leftovers in wraps (drained the liquid) with cheese, sour cream and tomatoes. Loved it!!

Best Chocolate Chip Cookies

YUMMY!! Best chocolate chip cookies is an understatement. These were amazing! 5++++++ I did refrigerate the dough before baking to avoid spreading. I didn't use the nuts since we have some friends with allergies. I also divided the dough in half (before putting in chocolate chips) & did half with chocolate chips and the other with butterscotch chips. Next time I will try adding different things...maybe Skor bits...?? This has become by go to cookie recipe...Thanks for sharing! :)

Baked Pork Chops I

Delicious Ham and Potato Soup

Delicious! Will be making this again. I added peas and carrots. I turned the leftovers into a pot pie the following day. Added a little more flour to thicken to a gravy consistency then put it in a deep dish pie shell. Covered with a second vented pie shell. Baked at 400 for 30-40 minutes (until pie crust is golden brown). Yummy! Yummy! Yummy!

Bourbon Whiskey BBQ Sauce

5++++++ Who knew Whiskey could be so delicious with ketchup instead of Coke! YUMMY!!! I did add the hot sauce because my husband and I enjoy spicy. If you're not one for spice, omit it & whoever wants can add it after. Will be making this again and again FOR SURE!! Thank you!!

Iced Pumpkin Cookies

ABSOLUTELY DELICIOUS!!!! Received amazing reviews - even from those who don't like pumpkin. I did use 3 tsp. pumpkin spice instead of the cinnamon, nutmeg & clove. I got about 3 dozen and they were all gone in 1 day - I've been asked to make more. Perfect Thanksgiving treat! Thank you for submitting!!!! UPDATE: I've had to make this recipe for every one of our family and friends at least TWICE each!! UPDATE: I'm going to try freezing these. Will post and update when we try them. *fingers crossed*

Ultimate Twice Baked Potatoes

ABSOLUTELY DELICIOUS!!! I decided to make these for our out if town guests, thought they would be a perfect compliment to steak. My husband & I love potatoes (easily one of our favourite foods) so we always get excited to try new potato recipes. When trying new recipes my husband & I like to be the guinea pigs, not our guests, we were glad that we were. I made them the day before so we tried them that night and refrigerated them for the BBQ the next day - was nice to have prep out of the way. We couldn't get enough of these & we ended up eating them the following day as well...three days in a row. This one's a keeper!! Mmmmmmmmmm....
