Quick Gnocchi

Reviewed: Nov. 26, 2013
This was good! I know the purpose is "quick" gnocchi but we always like to have the ridges in our gnocchi - it's worth the extra time. As per other reviewers, we didnt use all the flour, added italian seasons and used a herb potato flakes for extra flavour. Yummy! Will becoming back to this recipe with the above updates.

Burrito Pie

Reviewed: Nov. 14, 2013
I don't think it would be fair to give this a review since I took some suggestions from others and kind of made this my own. I always like to review a recipe though. This turned out great.

Mrs. Sigg's Snickerdoodles

Reviewed: Nov. 5, 2013
I may have tripled the amount of cinnamon /sugar mixture these were rolled in. One thing I find with snicker doodles: you can never roll them too much!! Next time I will make these a little smaller. Otherwise they were absolutely DELISH. Watch your time!! Timing is crucial to a good snicker doodle. These are my sisters favourite and she said they were the best she's ever had. Thanks for submitting!!

Bread Pudding II

Reviewed: Nov. 12, 2013
Read several reviews that this was "too eggy", we found it wasn't eggy at all - it was completely dry!! I even added extra milk (bread was a few days old). I have fond memories of used making bread pudding as a child with my great aunt. Unfortunately this one didn't live up!

World's Best Lasagna

Reviewed: Nov. 11, 2013
Mmmmmmm! 5++++++++++++++++++++++!! My husband is Italian and his favourite food is lasagna....his GRANDMOTHER'S lasagna - needless to say, we had BIG shoes to fill. We filled them (or at least came extremely extremely EXTREMELY close)....He LOVED this. I think what really gave this the extra edge: 1. Let the sauce simmer for 6 hours 2. homemade pasta (mix 1 c flour + 1/2 tsp salt, make well in flour, add 1 egg + 1 Tbsp olive oil + 2 Tbsp water, knead 3-4 mins, let rest 15 mins, roll)!! A little more time but soooooooooo worth it. Yummy yummy!!! It's just the two of us so made several smaller portion and froze them. Can't wait till we can have moooorrreeeee!!!!

Creamy Rice Pudding

Reviewed: Nov. 5, 2013
I really love rice pudding so I was looking forward to trying this. Consistency was great but was a little disappointed - was very bland/unsweetened. I wanted to try this as a "healthier" version so I followed the cook's notes and used Splenda (1/3 the amount, as stated). Moral of this story: healthy isn't always better. Lol Needless to say, I won't be doing that again. I don't usually put raisins in my rice pudding but added them after to get some sweetness. I think this addition saved the day! Although the end result wasn't as sweet as it was super simple and had a great consistency making this worth trying again. Next time I will use sugar or more Splenda though. UPDATE: after refrigerating I had to reduce my 3 stars to 1. Although it did sweeten up a tad, it completely dried out!!!! There goes any points for consistency. I will try adding some milk to "water it down" & hopefully this helps - I'm determined. Plus it would be a shame to see good ingredients go to waste (I even made a double batch).

Peanut Butter Cup Cookies

Reviewed: Nov. 5, 2013
I'm allergic to nuts so i have to rely on others for feedback. These were "good but I have made better things" so I'm only giving these 4 stars. I followed other reviewers suggestions: 1. put the chocolate in the fridge once unwrapped. This definitely made it easier. 2. put the whole tray in the fridge once I inserted the chocolates. I was going to ignore this step until I saw the chocolate melting away inside. 3. A few people suggested waiting a few minutes for the cookies to "drop" in the centre before putting in the PB cups to avoid cracking. I didn't have a problem with this (they already seemed "dropped" when I took them out of the oven)& inserted them all right away - no cracking! 4. Filled each cup with 2 tsp dough.

Slow Cooker Chicken Taco Soup

Reviewed: Nov. 4, 2013
SUPER EASY & SUPER YUMMY! Decreased the chicken & kept everything exactly the same. Yummy!! Yummy!!! We like spice so we added some chilli powder. Everyone had seconds...& thirds! I even used the leftovers in wraps (drained the liquid) with cheese, sour cream and tomatoes. Loved it!!

Delicious Ham and Potato Soup

Reviewed: Oct. 17, 2013
Delicious! Will be making this again. I added peas and carrots. I turned the leftovers into a pot pie the following day. Added a little more flour to thicken to a gravy consistency then put it in a deep dish pie shell. Covered with a second vented pie shell. Baked at 400 for 30-40 minutes (until pie crust is golden brown). Yummy! Yummy! Yummy!

Banana Sour Cream Bread

Reviewed: Jul. 2, 2013
5+++++++!! My mom used to make banana bread for us as kids on a regular basis so I'm always reluctant to try other recipes since hers has always been my favourite - none of them can even compare with my mom's. I'd have to say that this recipe is better (sorry mom lol). This is going to be my new banana bread recipe!! I made then into square cupcakes for easy individual servings (made 1/2 the recipe & got about 18 "cupcakes"). I even added some chocolate chips to some. I made these last night and there are only 5 left this morning!!! ***DO NOT FORGET the dusting of cinnamon & sugar on the pan this adds such wonderful flavours!!!!! Although my husband and I are on an eating healthy mission so next time I'm going to try some of the other reviewers suggestions to make this lower fat. UPDATE: I made this with low fat sour cream and I noticed quite a difference. Will use regular next time. I also tried a "crumble" topping on one of the loaves (1/4 cup packed brown sugar, 1/4 cup flour, 2 Tbsp softened butter, 1/4 tsp salt. Mix all together until it's crumbly). This was good but I'm a huge lover of the sticky top of banana bread (sometimes I just eat the top and give my husband the rest) so for me I prefer this without - personal preference. Others said they prefer the crumble. This is the first time I made these in "regular size" loaves (not sure if that was the diff) and I noticed that the colour toward the top of the loaf was different than the bottom. Although still delicious.

Best Chocolate Chip Cookies

Reviewed: Jun. 20, 2013
YUMMY!! Best chocolate chip cookies is an understatement. These were amazing! 5++++++ I did refrigerate the dough before baking to avoid spreading. I didn't use the nuts since we have some friends with allergies. I also divided the dough in half (before putting in chocolate chips) & did half with chocolate chips and the other with butterscotch chips. Next time I will try adding different things...maybe Skor bits...?? This has become by go to cookie recipe...Thanks for sharing! :)

Pecan Pie V

Reviewed: Jul. 23, 2014
I followed to recipe exactly. Although it tasted delicious, I was disappointed that the filling was really runny - like maple syrup. Everyone loved the flavour so I will try this again but will bake longer.

Easy Garlic Broiled Chicken

Reviewed: Mar. 10, 2014
I made this with chicken breast and it was okay. Cooked at 350 for 30 minutes. The chicken was juicy and tender but didn't find it had any flavour from the butter mixture. Served with rice and asparagus.

Grandma's Lemon Meringue Pie

Reviewed: Feb. 16, 2014
I made this into mini lemon meringues (I got 15 about 2" each). Was good just not to our preferences. This was VERY sweet lemon meringue pie & we prefer a more tart version. Will be looking for another recipe or will tweak this one next time - maybe less sugar. Will update.

Apple Crisp II

Reviewed: Nov. 26, 2013
Halved the recipe in an 8x8 pan. It was more of just crumble - the apples really reduced (almost to nothing) which made the crumble part overpowering. I did use gala apples so I'm not sure if this was the issue. The crumble was delicious though so I wouldn't change that, would just increase the amount of apples. It was also extremely sweet for our taste! We had some homemade apple sauce so we mixed that up with the crumble and it was yummy!!! Will try this again with Granny Smith, less sugar & more apples.

One Bowl Chocolate Cake III

Reviewed: Nov. 26, 2013
Yummy in the tummy! Made these for my cousin's work party and they were gone in seconds!! I used coffee instead of water (always love the coffe/chocolate combo) and buttermilk instead of milk (had some leftover and wanted to use it up). I filled them with a little chocolate pudding and topped them with a cream cheese frosting! DELISHHHH!!

Stuffed Cabbage Rolls

Reviewed: Nov. 21, 2013
Yummy! We lived these. My husband had never tried cabbage rolls and now we made them twice this week. The second time, we had leftover diced tomatoes so we used those instead of the tomatoe soup - they were just as delicious! I would like to note that we made about 20 rolls with the filling mixture....Maybe we had a really small cabbage..?? I'm not sure but they tasted delicious & that's all that matters to us!!

Roomali Roti

Reviewed: Nov. 14, 2013
This is a good base recipe. Although I will add the oil last next time - it made dough very clumpy. My grandmother was from Guyana so we loved our curry and roti. Before letting the dough rest, we usually roll out the dough and brush with oil. Then roll it up (oil side in) like a jelly roll, portion dough into individul size & refrigerate for 45 minutes. Once we've rolled out the dough before putting it in pan we again brush both sides with oil. When it is cooked we take the roti between our hand and literally clap it (to let the air out) - do this quickly as roti will be hot. Thanks for an old favourite. :)
