Light Oat Bread

It's a good recipe, and if you leave it to bake in your bread machine, you're going to do well. However, for those of you who will bake it in the oven, keep in mind, this is a very MOIST batter, so it would probably benefit you to leave it in to bake LONGER than usual. I took some tips from other posters who said they put it in at 350F for 35min, but it needed another 10 minutes, and it was STILL moist even then. With that said, it's a good recipe, and I will make this again.

Touchdown Chili

SO GOOD! Chili is a tricky thing in our house, because the kids hate beans, so I barely make it. But it's a cold night, and the ingredients are what we had at hand. Typically of how it goes down in our house with chili, I was waiting for the moans from the kids, so I really didn't think we would like this - I mean, beer and brown sugar, really? BUT WOW! that gave it a complexity in flavor REALLY worth trying. Even my picky kids LOVED it. I did omit the hot sauce, because not everyone likes spicy, BUT who cares?! It's still delish! I served it on top of a bowl of rice, top off with sour cream and a sprinkle of cheese. Voila! Don't hesitate! Try it!

Honey Whole Wheat Bread

I made this recipe exactly as directed (as I feel it's how it should be reviewed before "tweaks" are made). It's good, but a little on the dense side, but I find Whole Wheat bread is typically on the dense side. As for tweaks?-Perhaps it would come out fluffier with 1/2 the yeast, and letting it sit out for 12-18 hours to rise before baking.

Chicken Enchiladas V

Not really a "Mexican" enchilada because of the use of the cream of mushroom, so to the soup, I added another 1/2 cup of the sour cream and also a whole can of enchilada sauce to make it more authentic. I think if I only stuck to the original recipe this would not be called an enchilada but with these variations it was much tastier and more of an "enchilada". Would make again, but not really a fan of the can of soup in an enchilada. Perhaps a can of the cheese would work better as another reviewer suggested, but definitely use enchilada sauce in it.

Bake Sale Lemon Bars

Fabulous! BUT needs some changes--more tartness needed to even out the excessive sweetness. So, made 2 batches to pick the best and had taste testings. One batch used the changes recommended by GourmetMommy--these came out too "eggy" tasting." However, the second batch was fabulous and everyone raved...These are the simple changes to make this recipe perfect--- 1 cup lemon juice, 1 cup sugar, 3 eggs, 4T flour. Do the rest as usual. Crust can also work w/one stick butter if you prefer, but the original recipe for the crust is good too (it does make more than enough though).

Best Bread Machine Bread

This is seriously the BEST White bread recipe ever---It's came out very fluffy. The only change I made was add only 1 Tbs. sugar instead of 3, and 1/2 tsp. more salt. Will make this again and again. Thanks so much to the poster.

Peanut Butter Bread

it's ok, not a cake and not a bread....kinda in-between. I spread peanut butter on it with a little jelly and served it open-faced as a snack. 60mins is too long as the cake did start to burn after the 45min. mark, so I took it out.
