Butternut Squash and Shiitake Mushroom Wild Rice Risotto

I should have paid more attention to the review which mentioned that the wild rice needs more cooking time. I was overall disappointed in this recipe. I used Parmesan instead of Gorgonzola. Perhaps if I had used the Gorgonzola I would have been happier with the overall taste.

Tuscan Chard and Cannellini Bean Soup

A delicious soup that's healthy and easy to make. I added carrots and celery along with the onion. I also used canned diced tomatoes instead of the sun-dried, and substituted barley for the pasta. I was happy to be able to use a saved parmesan rind and I think that added some great flavor.

Portobello Mushroom Stroganoff

I will definitely be making this on a regular basis. So easy, and really flavorful. Thanks to all the great tips, I modified mine as follows: added some chopped cremini mushrooms with the chopped onion, cut down sour cream to 1 cup, added some soy, worcetershire, and dry mustard to the sauce.

Lentil Soup

I was planning to serve this for dinner and cooked it for about 5 hours on high in the crock pot but the lentils were still tough to the bite. I ended up leaving it on high and forgetting about it and going to bed. I woke up at 2am and turned off the crock pot. In the end, it cooked for 12 hours on high and it was perfect! I used a lot more spinach than called for, and I didn't slice it -- just tossed in baby spinach leaves whole. And I used balsamic vinegar as other reviewers suggested.

Ham and Bean Soup I

Very yummy and spicy! I used hot italian sausage. I accidentally picked up a package of pre-cooked sausage but it was fine. I just sliced it up. With the tomato base, it reminded me of red beans and rice. My soup was watery, as other readers, so I added egg noodles at the end. I think if you cook with the lid off, it would get thicker.

Easy Broccoli Quiche

Delicious. I made a few modifications: (1) Pre-cooked crust for about 11 minutes (2) Sharp cheddar instead of mozzerella (3) only 3 eggs and 1/2 c milk and 1/2 c cream and skipped melted butter (4) added chopped ham. My 5 year old loved it and my husband, who isn't a big quiche guy, had seconds.

Broccoli Chicken Divan

I've made this with cream of chicken soup instead of the cream of broccoli soup and actually prefer it with the cream of chicken. My husband, who is not the biggest fan of casseroles, loved the version with the cream of chicken soup. My five year old loves it either way. A GREAT recipe.

Butter Cookies IV

Perfect! My daughter's teacher asked me to bring 3 dozen heart-shaped cookies for Valentine's day for the kids to decorate. I wanted a cookie that would stand up to the frosting and sprinkles and this recipe was ideal. The taste was very nice -- just sweet enough. I will definitely make them again. Thanks to Ro for sharing the recipe.
