Spinach Artichoke Lasagna

This was my first time making lasagna, and this was an easy and great recipe! I added cooked chicken to half of it for my husband, but kept my half vegetarian. Next time I'd like to try adding more veggies, like mushrooms or eggplant. Delicious!

Moussaka Cottage Pie

Absolutely superb! I only used 1 lb ground turkey (it's all I had) and the whole can of crushed tomatoes. I added 1 tsp cumin to the spices, and seasoned the eggplant with black pepper. I made homemade mashed potatoes for the topping (7 small-to-med Idaho potatoes), and seasoned those with garlic powder and black pepper. I baked everything in a 9 x 13 dish. It was perfect!

Cranberry Sauce

Excellent! I reduced the amount of liquid and sugar slightly. I also cooked longer and mashed the cranberries with the back of my spoon for a thicker sauce.

Golden Potato Soup

Excellent! Hearty enough for my husband, but healthy enough for me! The only thing to make this soup is better is to place some of it in a food processer for a creamier consistency. I also used skim milk and a blend of 2% cheeses, but you would never know the difference! I found that this recipe makes about 4 servings, so double up if you're feeding a crowd (and with a recipe this cheap, easy, and good, you'll want to serve it to company)!

Best Fried Green Tomatoes

Great batter! I subbed wheat germ for the breadcrumbs since I don't keep them around. Instead of frying, I "oven-fried" (baked) mine at 425 F. Not quite the same as frying, but they still turned out fantastic!

Cranberry Orange Bread

I cut the sugar to 3/4 cup. Most of my family enjoyed it that way (as did I!), but my husband wished they were sweeter.

Cheesy Polenta

My first time making polenta, so I didn't know what to expect. This was fantastic! I used nonfat milk, 2 Tbs butter, and parmesan cheese. My husband and I loved it. Thank you! :)

Baked Falafel

These were a little bland for me---I added garam masala and ground red pepper---but otherwise great! I used a 19oz can of chickpeas and subbed wheat germ for the flour, and didn't have a problem with the batter being too thin. Even my husband, an avid carnivore, raved about these!

Jif® Peanut Butter Granola

I used all natural peanut butter instead of Jif, and it worked great! I left out the dried fruit because my husband doesn't care for it. He loved this!
