This was soooooo good! I could eat these all week. As suggested, I used oats instead of bread crumbs. Mine didn't stay together too well, but I also made a much bigger batch so I think I just needed one more egg.
We try to do gluten free so I topped them with carmelized onions and served them over an avocado, corn and tomato salad with a cilantro vinaigrette...I can't tell you how amazing it was. Meat eaters weren' missing the meat at all since it had so much flavor!
I'd love to find a way to replace the eggs and make them vegan if anyone has suggestions.
