Cabbage Roll Casserole

This is a good recipe. Nicely seasoned, good cabbage roll flavour. The casserole held together well. I used more tomato sauce than called for - about 40 ounces in total and I think mine would have been too dry otherwise. I also seasoned the tomato sauce with garlic powder, dill, and pepper before puring it over the casserole at the end. Anyway it went fast and I would make it again!

Cranberry Bars

I only gave this 3 stars because even though I used rolled oats and followed the recipe exactly, I ended up with bars that fell apart too easily (chilled, I was able to get them out of the pan alright but once at room temperature, they were difficult to eat) with tops that were over browned while the bottom crust was soggy. This recipe would have been a disaster if they hadn't tasted so good. They were delicious, and even with the soggy bottoms they all got eaten.

Mrs. Sigg's Fresh Pumpkin Pie

I was loking for a recipe that used evaporated milk instead of sweetened condensed and this is the one. One recipe made 2 9" pies for me, and they were good. I had a ton of fresh pumpkin puree in the freezer (you can also boil or steam pumpkin instead of baking but you may have to strain the puree through a cheesecloth if it's too thin). This was the first year I did not use canned pumpkin, and fresh does make a lighter tasting, yummier pie. I also topped this with a flour, butter, cinnamon, and brown sugar streusel topping from another recipe that is delicious and goes on all my pumpkin pies now.

Chocolate Zucchini Cake II

Delicious, a nice, moist, chocolatey cake. I grate my zucchini instead of chopping it and I also put half the choclate chips into the batter because I like the extra texture in the cake. If you have picky eaters, noone needs to know there's zucchini in this cake.

Cinnamon Streusel Orange Muffins

Just finished making these! They are very good and I'm not usually a muffin fan, but these sounded yummy and I was not disappointed. I used undiluted orange juice concentrate instead of orange juice, and got a very nice orange flavour.

Indian Chicken Curry II

I doubled the cayenne because I like it hot, and added a can of chick peas at the end to feed a few more unexpectedly, and thought this was a very good curry recipe. Easy and quite delicious. I will make it again.
