Baked Hash Browns

I was looking for a hash brown recipe for a brunch that wasn't a typical condensed soup dish and decided to give this a try. I am so glad that I did! This dish got rave reviews from everyone at the party. I've served this for Christmas breakfast, a New Year's brunch, and as a side dish--it went best with my chicken pot pie. I pretty much do the recipe as-is although I have used whole milk instead of cream and it was just as good. Also, for anyone giving a party, this recipe scales well. I quadrupled it for our brunch by layering the hash browns like a lasagna and sprinkling/pouring the spices/cheese/milk on top of each layer. It took a while to cook but it was perfect. The recipe keeps in a chafing dish very well. edited 2.12.2012 to add: I never could figure out how people were getting greasy dishes out of this recipes but now I know! I always used Ore-Ida hash browns but the store was out and I went with a store brand. I could not believe the difference in the dish based on that one change!! Definitely stick with the highest quality hash browns you can find!

Cheese Dipping Sauce

Chicken Pot Pie IX

My husband wasn't sure he'd like it so he tried a spoonful--he then cut a piece for me and carried the pie plate to his office and shut the door. :) He absolutely loved it and told everyone about it! I used frozen mixed veggies to cut back on time. I also weighted the crust and prebaked it and then brushed it with milk (was out of eggs!) before filling it. Be sure and get a high quality crust because it makes all the difference!

Mexican Corn

I made this for a small dinner party and it was a huge hit. It was a bit too hot, though. I used one can green chiles and one can jalapenos, so next time I'll use two cans of chiles. I did cut back the cream cheese a bit and it was still incredible!

Rainbow Sherbet Cake

This was divine. I made it for a community group member's birthday with strawberry ice cream--his favorite. I also put sliced berries around the edges for decoration. We had ten people and not a single piece was left!!

General Tsao's Chicken

We really liked this. Its my favorite food at Chinese places so I was excited to see this! The color wasn't quite right so I added a bit of ketchup to the sauce to make it red but that's only a preference. I think I overdid the cornstarch in the final step so it was seriously gelatinous. My fault! One thing I will change, though, is rather than using cornstarch to batter the chicken, I think I will use flour. I tasted a bit too much starchiness. Otherwise this was awesome!

The Best Sweet and Sour Meatballs

Awesome Slow Cooker Pot Roast

My husband and I have pronounced this the best roast we have ever had--and we've had some good ones! When I put the liquid ingredients together, I thought there was no way there'd be enough gravy. But I did it according to directions (except for adding carrots and potatoes on the bottom) and it was more than perfect!!

Salisbury Steak

I found this a teeny bit bland, but when I tried to spice it up the second time, my husband said he liked the orignal better--and he likes even spicier food than I do! This is easy and fast and is often requested at our house.

Nutella® Cheesecake

This is definitely rich but DON'T let that put you off!! Everyone we served this to loved it. This cheesecake was so easy and fairly inexpensive. I make a lattice top with melted chocolate chips and a pastry bag to make it prettier and kept it in the freezer by my husband's request. He said he preferred it that way.
