Mexican Casserole

Really yummy! I followed the directions almost exactly. I did layer the cheese on top of the meat on the first layer. I also did not use 4 cups. I used and entire package of the shredded Mexican cheese which I think equates to only 2 cups. Perfect recipe for 2 people and have leftovers for the week!

Enchiladas Suizas

This was soooo good! I have never made Enchilada's before and was pleasantly surprised how this came out. I did omit a step and did not fry the tortilla's but warmed them in the microwave as another person has suggested. Tasted wonderful!

Momma's Sloppy Joes

These were sooo good! I took some of the other suggestions and browned the turkey with some onion and red bell pepper. I also browned it in 3 tablespoons of butter. I also switched up the sauce and only used 1/2 cup of ketchup and replaced the 1/2 cup with BBQ sauce and a couple of dashes of Worcester sauce. I also substituted the white sugar for brown sugar. These turned out AMAZING! They have been added to my weekday menu meal plan!

Chicken Piccata II

Really really good. I took another readers advice and cooked the chicken in olive oil and butter first and let it sit in the oven while I made the sauce... Really delicious and I served it over a be of pasta...

Buttercream Frosting

Pretty good. Followed the recipe exactly, but halved everything since I only had a dozen cupcakes to frost. I wanted a champagne flavored frosting, so I did add a couple of tablespoons of the champagne until I could get the right flavor. If you do this you need to remove the same amount of milk otherwise it becomes to runny. Or add more Powdered Sugar.

Real Strawberry Cupcakes

I thought these were quite delicious. However next time I think I need to add more strawberries as they strawberry flavor was not as strong as I would like it to be. I did follow the recipe exactly. Also I did not use the frosting but instead used a Champagne Vanilla buttercream frosting. Tasted like Strawberries and Champagne!

Extreme Chocolate Cake

Raspberry and Almond Shortbread Thumbprints

FANTASTIC!!!! These were so good! I did put them in the freezer for about 7 minutes so they would not spill over the sides and that worked. Mine don't look quite like the picture, probably need a bigger cookie scooper so I can make a bigger indentation. But they taste great!

Iced Pumpkin Cookies

Absolutly wonderful! I followed the recipe almost exactly... I added a pinch more cinnamon to the cookie mixture and then I added a teaspoon of cinnamon to the icing. I also only baked them for 13 minutes and they were perfect!

Classic Waffles

I made this recipes as is. I think that next times I will make some of the changes people suggested, The basic recipe is fine. Just need to add some more flavor to it. UPDATE: I actually made these for my girlfriends on my wedding day and I added cinnamon to the mixtue and an additional teaspoon of sugar and they were delicious! (especially with the mimosas!). Now I need to make them for my hubby!

Double Tomato Bruschetta

So good! I did not have Roma tomatoes and I wanted to use tomatoes from my garden soI sued Beefsteak tomatoes and stil delicious! I also omitted the sun-dried, just because I did not have any in the house.

Apple Pie by Grandma Ople

Very good. I took others advise and added a teaspone of vanilla, cinnamon and nutmeg. I also coated the sliced apples with cinnamon and some nutmeg. Will make this again!!!!!!

Caramel Popcorn

I was told this should be one of my new "staples". Real easy if you follow the directions. I also took the advise of others and while I was making the caramel, I let the popcorn sit in the oven in the tray to keep warms and it coated so easy! This was delicious!
