Chocolate Syrup

I made this today and it turned out great. I took the advice of one commenter that suggested dissolving the sugar in water before adding the cocoa. Yes, it is thin right now though most comments indicate it will thicken slightly as it cools. This is a great alternative to Hersheys, cheaper and has no preservatives.

Buttermilk Pancakes II

Zucchini Patties

I made these today and they were delicious. This is a great bisic recipe that can be tweaked to your individual tastes. Based on some reviewer suggestions, I substituted sharp cheddar for the mozarella cheese and used panko crumbs intead of flour. I also added a couple of jalapeno (seeded) peppers finely chopped. After they got crispy, I moved them to layers of paper towel and also patted them on top to soak up excess oil. I served them with spicy salsa (I like spice). A great way to use up this plentiful vegetable in the summer. I processed the fresh zuchinni in my food processor and put it in a bowl with paper towel on the bottom for a day to draw out the excess moisture. The zuchinni was given to me by a co-worker. This is a keeper and give it five thumbs up!!!

Steel-Cut Oatmeal

This is delicious. I had a bowl this morning with a fresh peach. I didn't have any cashews so substituted pecans nor did I have any coconut. I did add some flax seed at the end of the cooking time to make it even more nutritious. I made the recipe for four and will be having this for breakfast for the next three mornings it appears. Again delicious! UPDATE: I made up another batch and found a suggestion on the www. that you can freeze individual servings in cupcake wrappers and nuke them for a couple minutes, stir and 30 seconds or more. I now have several individual servings that I can utilize when in a hurry (or not) in the morning.

Herbed Potatoes and Onions

I made this in the oven as I think potatoes get rubbery in the microwave. I didn't have any Italian seasoning so added garlic power and garlic pepper, fresh ground pepper and a little fresh ground sea salt. I also diced the onion (personal preference). Quite good!

Juicy Peach Crisp

This was delicious. The changes I made was I took advice from others on here and halved the flour and used oatmeal to make one cup. I reduced the sugar and omitted the almond extract as I didn't have any on hand. This will now be my new "crisp"recipe for all berries and also apples. Very yummy.

Authentic German Potato Salad

Blueberry Sauce

I bought blueberries at the Farmer's Market and tried this though halved the recipe. It is excellent. Had it on waffles this morning. I will make this again and will use frozen during the winter months.

Buttermilk Pancakes I

Rarely do I make pancakes though tried these and they were delicious. I used a little less sugar was the only change made based on prior comments. Cooking for one presents its challenges as in leftovers. I put the extra pancakes in a plastic sandwich bag and will just warm them in skillet to enjoy again tomorrow.

Taco Salad I

I haven't made this in awhile but do love it. My only suggestion is that unless you know it will be consumed in one sitting, only add the chips to each individual serving as they will get soggy. This is not a dish worthy of leftovers. I have only used Catalina but might try the French dressing next time.

Fresh Tomato Basil Sauce

This is great, the only thing I did differently was add the fresh basil to the tomato mixture just before serving. Fresh basil looses its freshness if cooked a long period of time and the color remains bright green if added at the last minute. Minced fresh garlic also adds a wonderful taste. Thank you for sharing.

Seafood Pasta Salad

I made this for a potluck at work and it was excellent. I also added red sweet pepper and green onions as I had them on hand and few dashes of red hot. It is colorful and very tasty.
