White Chili with Ground Turkey

I used half the chicken stock but otherwise followed the recipe and it was great! The cinnamon really added a nice flavor.

Mini Ham And Cheese Rolls

These were very popular at a recent open house buffett, especially with kids. You can probably fill it with anything but don't skip the poppy seed drizzle - it's tasty and makes the sandwich look great!

Beef Bulgogi

We loved this recipe and it was really easy! I did have to improvise a little because I did not have green onions or 2 TBS on sesame oil. I used just 1 TBS and 1/4 of a white onion finely minced and used brown sugar as others suggested. I also cooked it more like a stir fry in a hot sauté pan but it still came out wonderfully. Served it with white rice and hot pepper sauce wrapped in an iceberg lettuce leaf and it was GREAT! The family is already asking when we will have it again.

Super-Delicious Zuppa Toscana

I used hot sausages cut into slices and left out the red pepper flakes which was hot enough for my family. I also used a whole bag of baby spinach and substituted milk and cornstarch for cream as someone else suggested. After step 2 I put it all in a crockpot for 8 hours and did not add the milk/cornstarch until about 10 minutes before serving. The end result was GREAT! I had nice hot soup for a chilly winter night. This will be a regular crockpot meal in my house!

Spinach and Red Chard Quiche

This was surprisingly good and oh so healthy! I would totallly agree with other reviewers that said the tofu is not a good base. I used have a tub of firm tofu and two eggs and it was still a bit runny. Next time I think I will just do all eggs. Be sure to use the chard stems - when chopped and added to this, it give some color (looks like tomatoes) and adds a bit of crunch.

LOVED THIS SOUP! I did leave some things out and made this will all Trader Joe ingredients - a bag of Frozen Seafood Medley, a package of frozen cod and a box of their frozen Steamer Clams. I just threw it all in and it was wonderful and so easy!! I have filled my freezer wtih the above items so we can have this once a week!

Spinach and Mushroom Casserole

I served this last night and it was a hit. I did a few things differently, probably like other reviewer - I did not read them all. I used 2 bunches of fresh spinach, which I wilted and squeezed to remove water. Then I sautéed the mushrooms together with the onions and some garlic. I cut back the butter poured over the spinach to 2TBL and next time, I will cut it again or perhaps leave it out all together. I think the cheese adds enough flavor that all that butter is just not needed. Above all, this is easy and tasty!

Herb Rubbed Sirloin Tip Roast

There are many reasons I love this recipe - it's easy, you cook it in the oven, lovely presentation and it's really tasty! I served it for company last night and both kids and adults loved it. FYI - I rubbed the meat and let it sit in the fridge a few hours just to see if it would taste better. The flavor was better but the paprika colored the meat a little funny around the edges.

Ham and Wild Rice Quiche

This was really good! The wild rice gives it a nice texture and flavor while the red pepper gives it some zing. My famliy loves it and I have taken to 2 brunches where it met with rave reviews. This is WAY better than your standand ham & cheese quiche!

Aunt Carol's Spinach and Fish Bake

I will admit that I made some drastic changes in this recipe but I had to use what I had on hand! I did not have any cheddar cheese so I used real parmesan (not the green can kind). I did not have frozen spinach so I used a bag of fresh that I sautéed with a small chopped onion and 2 chopped garlic cloves. I used Italian breadcrumbs instead of plain. Even with these changes, this fish was yummy and a big hit with the family. I may try it the “real” way one day but I liked this way just fine!

Pork Chops and Sauerkraut

My family and I liked this a lot - quick, easy and tasty! I didn't have apple juice so used 1/2 cup apple sauce. I also added about 1/2 cup water half way through cooking to be sure the kraut didn't burn. Like one of the other reviewers, I am from a German background and this is just like what we used to have at home. Served with some mashed potatoes, YUMMY!!!

Red Skinned Potato Salad

I made this for yesterday's brunch and it was very good. I am personally not much of a potato salad fan but I thought it was really tasty. It was much better than the usual perhaps due to the bacon. I added two extra celery ribs and used low fat mayo to make it slightly healthier.

Almond Mandarin Salad

This was really good - I can see why it has been rated so well! I used Sesame Honey almonds from Trader Joes and they added a nice sweetness. My only comment is that next time I might use something other than red lettuce because it wilted rather quickly. The salad was still really yummy but it just did not look as good on a buffet table.

Guy Approved Meatloaf

I have made this more times than I can count and it is a family favorite. I always leave off the bacon coating (to chewy for my taste) and will often use breadcrumbs, crushed croutons or more crushed crackers instead of the potato chips (since we usually don’t have any.) The smoke flavor seems to be the magic ingredient that makes this so yummy. I have even made this for school potlucks and kids love it.

Bull Riders All Beef Chili

YUK! I did not like this chili at all! I just don't understand putting in the eggplant - it was mushy and added little to the overall taste. Also I found the smell of the cooking eggplant very unappealing, which is probably another reason it was so unappetizing in the end. In all fairness, my husband liked it but he is a sweetheart and will eat almost anything I make and say it’s good. The kids absolutely refused to taste it and they are usually more adventuresome, plus they like chili! I only tried this recipe because I had some stew beef I wanted to use in a different way. I have now learned my lesson and will never again make a recipe that has not been reviewed!

Parmesan Chicken I

I'm not sure what to rate this recipe because we haven't eaten it yet. I just went to check on it after 6 hours of cooking on low and it's completely overdone already! A little stir of the pot shredded the chicken and turned the rice to the consistence of stuffing. I don't know what to do since dinner is not for another 2 hours. It might be the fault of the cockpot – it’s brand new but it only had 4 setting so perhaps the low is not low enough. This dish does seem to taste ok - hope it’s not too dried out by dinnertime!

Cuban Ropa Vieja

I was happy to find this quick version of a recipe I got from a gourmet magazine and it was just as good! As per the gourmet version, I added a lot more garlic (5 cloves but will probably use even more next time) and 1/4 cup of capers at the end, which added a nice salty/tangy flavor. Next time I will try this with a can of drained tomatoes rather than the sauce because I think there was more than enough liquid with the beef stock. I think the nicest thing about this recipe is that it uses many fresh ingredients rather than canned or powdered soup, etc. that seems to be popular in crock-pot cooking. This might take a few more minutes to prepare than some other crock-pot recipes but it is definitely worth it!

Champagne Shrimp and Pasta

This is GREAT! I have made it twice and both times my husband raves! Each time I used white wine instead of champagne and the second time, I used half shrimp and half scallops (YUMMY!). This dish is fairly easy to put together and looks nice so I will certainly try it for company.

Seven Layer Tortilla Pie

This was a big hit with my husband and the kids liked it too. I was out of black beans so used white kidney instead and it still worked. The 40 minute cooking time didn't heat it through but that was probably because it was in the fridge for a few hours first. Next time I will throw in some cooked chicken for my family of meat eaters.
