Turkey and Quinoa Meatloaf

Unbelievably good, especially for something involving ground turkey and quinoa. I halved the hot pepper (aka Tabasco) sauce after reading some of the reviews and it came out perfect. Even my 11-month-old loved it (and could eat it!).

Thai Spiced Barbecue Shrimp

This was easy and came out great. Rather than skewer the shrimp, we cooked them in a grill bowl (a metal bowl with lots of holes in the bottom and handles) -- It saved a ton of prep time!

Honey Chicken Stir-Fry

This was fast and okay. It obviously would have been better with fresh veggies, but it's a fair sacrifice for quick preparation time! Watch out when you throw the garlic in the wok -- Ours burned in seconds!

Jalapeno Corn Bread

Super easy. Cornbread wasn't spicy at all with the seeds removed, however. I might try leaving in a few seeds next time. We used muffin pans with this recipe and made cornbread muffins -- They turned out great!

Peanut Butter Cup Cookies

Just like the peanut butter Hershey Kiss cookies, but more delicious with mini peanut butter cups! You can use a regular cookie sheet if you don't have a mini muffin pan and they'll still turn out fine.

Make sure you make the recommended 40-ish cookies with this recipe -- If you make them too large, they take so long to cook through that the bottoms burn. The second batch I made was perfect!

Blackberry Cobbler II

This was relatively simple to make and the recipe worked well without adjusting the ingredients. I found the cookie sheet lined with aluminum foil unnecessary -- My skillet didn't boil over or anything. I wasn't that crazy about the topping -- I wish it had been more like pie crust. If I make this one again, I'll probably use more blackberries -- The ratio was a bit too much crust to not quite enough blackberries.

Chocolate Chip Pancakes

These were excellent. My one criticism is that the batter was too thick -- It made spreading it out to make a round-shaped pancake impossible. I'll try adding more milk next time! I had the best luck with not overcooking these using medium heat.

Kung Pao Chicken

This was easy and awesome -- It tasted very similar to Kung Pao that I've had in Chinese restaurants like PF Chang's. I left out the white wine and the recipie worked fine without it.

Taco Soup III

This was really pretty great! I would definitely recommend using the 2 cups of water, as the soup was very thick even with it. I used HOT taco seasoning and the soup came out a bit on the hot side. I almost thought there was a bit too much meat in it, so I might go for 1 lb of ground beef next time. Also, this may be obvious to seasoned cooks, but it wasn't to me... A dutch oven is just a bit pot with a tight-fitting lid! I assumed that I was supposed to leave the lid on for the 2-hour simmer and it worked well, so I'd recommend keeping the lid on!
