Corn Souffle

Made this last week as written-MINUS 1 EGG- when my in-laws came over. My father-in-law wanted the recipe! He is the best cook I've ever known and when he asks for a recipe it's like winning a trophy. Whether this is actually a souffle or not it still tastes great!

All-Day Apple Butter

OH MY GOODNESS! This is sooo good! I had 30 lbs of fresh, North GA apples so I've made 3 batches of this. The 1st batch was Fuji apples (already sweet) but not knowing how much sugar to use I used the full amount...very sweet but still GREAT & we can spread it thinner. So good I made two more batches using Granny Smith. The sugar balanced the tartness to perfection for me! The final hour of cooking didn't reduce to the right consistancy but that's okay... it'll be just right for pancakes & waffles!
