Veggie Fajitas
Great basic and easy recipe. I added portabella mushrooms and zuchinni for texture and cumin for taste. Didn't have any green onions, and it worked out fine without them. I also used 2 red bell peppers rather than 2 yellow. I served this with tortillas, fresh guacamole, rice, black beans, and some cheese to top it off. Every one loved it, but the serving amount is a little small for a hungry family.

Cornucopia Salad
My family loves this salad! We usually go half and half red leaf and spinach, and usually substitute the almonds for pecans. We opt not to add sugar to the nuts, or the dressing as the salad is sweet and flavorful without it. We also prefer goat cheese rather than blue cheese.

Insalata Caprese II
Buy fresh! Fresh mozzarella, fresh tomatoes, and fresh basil! Go to the farmer's market for the tomatoes- it will be worth it. An average tomato will make an average dish. The freshness of the ingredients is really what makes this so delicious. Some people may be purists and disagree with me, but Balsamic Vinegar is also a must for this recipe. Just a splash will do it. I love Caprese!
